When i don't feel like cooking...I cook burgers....then I have to cook bacon...because my boys like bacon cheese burgers...then french fries...That i was not going to care about and just bake...but then they won't be crisp enough...so I wind up deep frying them....I guess my point is that even when I don't feel like it...I wind up cooking anyway.

I have two very simple recipes that I love to make when I don't feel like cooking - especially when I have had a long day at school with very excited students and then a long afternoon with my team members and then another two hours with the principal -
1) Salmon Cakes, rice and salad (mirowave a cup of rice; open a can of salmon, dice some onions and throw in one egg. Mix well. Heat skillet with olive oil (cover bottom well), drop patties into flour or corn meal, roll around until covered and drop in the skillet. Cook well on both sides (about 4 minutes each side). Make a quick lettuce and tomatoe salad, rinse and drain rice adding butter. Pop two patties on top of the buttered rice and saturate with mustard or horseradish or your favorite topping for taste. Happy eatings. Takes only about 15-20 minutes all together.
2) Hobo - I learned this from my daughter's Girl Scout days - in some heavy aluminum foil, drop a hamburger patty, (frozen or thawed), one or two thick slices of onion, quarter inch sized cut potatoes (with skin) - and from here you can add as much or little extra veggies or cobbed corn. Wrap it all up in the foil and place on a cookie sheet. Let it cook for 30 minutes - or until meat is the way you want it (rare, medium....) and the veggies tender. Open up and season accordingly. I always season prior, but you can wait until later. I like garlic, basil, worchestashire sauce, dill, lemon pepper, pat of butter, rice wine.

I keep lots of ready to eat vegies (pealed baby carrots in the bag etc) in the fridge for those times I really dont want to cook...other times I will boil up some pasta toss it with olive oil garlic basil and parmesian...sometimes add things from the fridge...I have also been known to just throw a steak on the indoor grill and make it a meal.

I cheat and order out...
Also, at Trader Joe's they have they have frozen pasta in sauce and vegetables that cooks up in 8 minutes.
Fire up the George Foreman and grill a chicken breast or a salmon fillet.
Dinner is ready in 15 minutes or less... which is faster than delivery.
Eat your heart out Rachel Ray... 30 minute meals means you're spending too much time gabbing instead of cooking... lol.
Edit...
If I really don't want to cook at all or spend money on delivery.
A bowl of cereal with soy milk.

Nuke a baker, grill a steak and steam a head of broccoli.
Ten minutes tops for the whole deal and dinner is on the table.
If you are looking for quick and easy you are probably tired and don't even want to mess with measuring the milk and butter for mac and cheese. Steak and a baker...the original comfort food.

You can't go wrong with the Peanut Butter and Grape Jam on a toasted tortilla. Add Doritos for crunch and get a glass of milk lowfat 1% milk. The easiest and quickest meal available. It helps if you take a rip or two...

Casserole: Mix chopped chicken breast, broccoli, mozzarella cheese with spaghetti sauce (whipped with 1/3 cup whipping cream). Mix, put in a casserole dish, top with shredded mozzarella cheese and bake at 350 for 20-25 minutes.
or French dip sandwiches!

I get my hubby to cook- so he'll grill chicken or burgers or make spaghetti. Or I'll just fix soup or Lean Cuisine or Weight Watchers for me and ask my hubby and son what I can cook (heat up) for them! Salads also work!

Tacos.
I keep an extra lb of cooked ground beef in the freezer.
I just nuke it with the mix and water.. cut the veggies while the shells warm.. and dinner is up in about 8 minutes :)

I eat the fruit in my fruit drawer. Wait, I do that all the time because I never feel like cooking. Sometimes I will make elaborate sandwiches when I'm feeling up to it. Yumm.
