i pan fry. i never use the fry daddy.
i always double coat in seasoned flour or corn meal. use milk with egg in it as your binder.
fry on medium heat. your pan should have about 1/2 inch or less oil - don't drown your fish in oil.
fry on 1 side till golden. flip and cook on that side till golden.
you can also score the skin so it's doesn't curl when you cook it
mmmm sooo good.
make some corn bread with honey glaze and you are done!!!

Ok--first, cut your skinned catfish fillets into about 3 x 3 inch chunks. Then, try using "Pride of The West" Batter Mix--you can get this at any grocery store.
Next, rinse your skinned catfish and pat dry between paper towels. Mix up the batter---SUBSTITUTING BEER for the water called for.
Next, make sure that your oil in the FryDaddy is completely heated--watch the red light on the setting. It will take about 10 to 15 minutes for the oil to heat to proper temperature. Then, dip your fillets into the beer-batter mixture, coating completely, and CAREFULLY place in the FryDaddy. Only put 4 (no more than 5) at one time. The cooking time for this should be about 6 to 7 minutes, and they should be golden brown and floating on the surface. At this time, remove the basket holding the fillets and drain well for about 3 minutes. Place on a china, glass plate, or in a shallow baking pan (if you are doing a lot of them and want to keep them warm) then, set your oven on the lowest possible setting (just to keep warm, not to cook--they're done).

First beat some eggs completely so that the whites are gone.
Then set up a bowl of all purpose flour with any seasonings mixed in.
Then set up a bowl of penko bread crumbs next to the flour.
Dip the catfish in the eggs and let the excess drip off and cover completely in flour
Quickly roll in in the penko bread crumbs.
I advise cooling the fish down first in order for the outside to set...
Then fry until ight brown and take out to cool.
Then dip again until golden brown.
Your fish should be crunchy and crispy.
:)
And if you dont like the bread crumb taste, then beer batter is always yummy!

Hello! My husband loves to fish. But one thing he won't fish for is Catfish. Problem is, I love Catfish. Here are two recipes that I have... one is fried and one is baked.
Beer Catfish
2 c self-rising flour
1 c beer; (your favorite brand)
1 garlic powder; to taste
1 salt and pepper; to taste
4 3-5 oz. catfish fillets; cut
1 vegetable oil; for frying
Combine 1 cup flour, beer, garlic salt, salt and pepper in a bowl. Mix well. Dip catfish strips in remaining flour and then in batter. Fry in hot oil in a deep-fryer or skillet until golden brown. Drain on absorbent towels. Serve hot.
Serve with your favorite sauce.
Baked Catfish
1 c fresh parmesan cheese; grated
1/2 c flour
1/4 ts seasoned salt
1/2 ts black pepper
1 ts paprika
1 egg; beaten
1/2 c milk
6 catfish fillets
1/4 c butter; melted
1 clove garlic; crushed
1 paprika and black pepper
Mix well first 5 ingredients. Separately, mix well egg and milk. Dip fish in egg mixture; dredge in flour mixture. Put fish in greased 9x13-inch baking dish. Saute garlic in butter for 2-3 minutes; drizzle over fish; sprinkle with paprika and pepper; bake at 350 degrees for 40 minutes or until fish flakes.

Make a batter to dip them in. Thin pancake batter works well. Make it with beer if you like.
Make sure the oil is fully heated before you put in the fish.
Only cook a few pieces at a time. All of them should have room to float to the top without overlapping.

*********GERIME”S BATTER FOR PAN FRYING CATFISH
1 c. self-rising flour
4 tbsp. cold water or more, if needed
2 tsp. salt
4 tbsp. salt
2 egg whites and 2 egg yolks
1 or more lbs. filleted catfish
Soak fish for 25 minutes in salted water. Whisk 2 egg yolks and stir in flour, cold water, salt and oil. Mix all together. Beat 2 egg whites until stiff, fold into flour mixture. First dip fish into flour, then into batter, then into flour again and into batter again. Fry in oil until golden brown.
Here is my Son’s favorite fish batter- GERIME’S Batter for pan frying Catfish
*****OVEN FRIED FISH FILLETS
2 lbs. fish fillets
1/2 c. fine dry bread crumbs
1 tsp. salt
1/8 tsp. pepper
1 tbsp. dried parsley flakes
1 tsp. paprika
2 tbsp. vegetable oil
Combine bread crumbs, spices and oil. Blend with a fork until thoroughly combined. Spread onto waxed paper. Press fish fillets into crumb mixture to coat both sides. Place on non stick baking sheet. Bake in a VERY HOT oven (450 degrees) for 12 minutes or until fish flakes easily with a fork. Serve with fresh lemon. Serves 8.

They key is to use cornmeal as opposed to breadcrumbs. Season the fish w/black pepper, seasoned salt and garlic powder. It seems like it would be best for you to buy some seasoned cornmeal such as louisian fish fry. Bread crumbs would be better if you were sauteing them in a pan.

let the oil get hotter. Do not put the fish in until the thing has told you it was hot enough for at least 5 minutes. They will be great!
