"Advanced Estate Consultant" sounds like someone who would like to pitch a couple of very confusing ideas that make them a lot of money, but aren't barred in TX to practice law. AKA someone who is so full of themself, they have no room to take you in. You should look for an "estate attorney". Interview a few and go with the one who you understand, not the one who has the fanciest pants.

They should also be able to provide you with a few referrals to insurance folks, investment folks, and accountants because in an "advanced" situation one person can't do it alone - especially if their only power is to provide documents.
