Stuffed Bell Peppers

8 bell peppers, 2 yellow, 2 green, 2 red, 2 orange (or any other color you like, purple), the tops cut off, deseeded, and deveined
1/2 a medium onion, diced
small penne pasta, or any other small pasta you like, macaroni is great, about a cup and a 1/2, or 1 cup of cooked rice
1 8 oz can tomato sauce
2 cloves of garlic, chopped, or minced
1 tablespoon dried oregano
1 tablespoon dried basil
16 thin slices of mozzarella cheese, or any other kind you like, cheddar, gouda, American..
salt and pepper to taste

Cook your onions, garlic, herbs, and spices, in a wok, or skillet, saute for about a minute, add your tomato sauce, and cooked pasta, or rice.
You may add a 1/4 cup of red wine, if you wish for added flavor.
Stir until thickened, turn off the heat. Let stand 1 minute or 2

Set your bell peppers on a cookie sheet. You may need to slice a tiny sliver of the bottoms so the bell peppers will stand up, making a flat surface.
Lay a slice of the cheese you want to use on the inside bottom of each bell pepper.
Fill each pepper with your stuffing, over-stuffing it is ok, since your stuffing will still be warm.
Bake in a 400 degree oven 15 to 20 minutes.
Add the other 8 layers of cheese to the tops, (if you used 2 or more different cheeses you can mix them up randomly, putting the bottom cheese cheddar, the top mozzarela, etc) and put the tops of the bell peppers over the cheese slices at a slight slant , you can multi-color them if you like, putting the red top over the green pepper, the yellow over the red, etc.
Its ok if the sauce bubbles over, it will look pretty with the gooey melting cheese running over.
Plate these in a decorate way on a nice platter, or round plate.

I originally wrote this recipe for a vegetarian. All you need to do to make it non-vegetarian is to add a 1/2 pound of cooked ground beef, or cut-up chicken breast to your rice mixture, or add shrimp, as I've included below.
In the center of the peppers, pile your cooked shrimp in the middle, garnishing with fresh chopped parsley, or cilantro.
If you want to make the bell pepper look like people, for a silly fun dish, you can decorate a side of the pepper by putting in whole cloves for eyes, a mouth and nose at the end of cooking. Optional, of course.

If you don't have rice use bite-size pieces of bread

This is a great recipe that i use all the time....

Stuffed Peppers

4 med. green peppers
1/2 ground beef
1/2 cup chopped onion
1 tablespoon margarine
1 can condensed tomato soup
2 cups cooked rice
1 teaspoon Worcestershire Sauce
1/2 teaspoon salt

Remove tops and seeds from peppers; cook in boiling water salted water for 5 min; drain. brown beef and cook onions in margarine until tender; stir in 1/2 can soup and remaining ingredients. Spoon meat ,mixture into peppers. Place in 1 1/2 quart casserole. Bake at 375 degrees for 30 minutes. Pour rest of soup over peppers.

(I thin the soup a bit with water because i like the stuffing loose. I also slice my peppers down the center remove the seeds and white veins and cut carefully ,very close to the green stem to remove it. I also spoon the thinned tomato soup over the stuffed peppers before cooking.)

I hope you have rice on hand too, as you need that.
STUFFED GREEN PEPPERS

6-8 large green peppers
1 lb ground beef
1/2 onion diced
1 bag shredded mozzarella
2 medium cans tomato sauce
2 cups rice

Wash green peppers, cut off top and scoop out insides carefully without poking through the pepper. Set aside.
Cook rice as usual. Brown the ground beef and onion in a skillet, drain off grease and add tomato sauce (leaving some to cover bottom of cooking dish).

Add cooked rice to meat mixture and stir together well. Place some mozzarella in bottom of green peppers and then spoon in meat mixture, packing down carefully until filled.

Sprinkle mozzarella on top.

Bake at 375°F in a covered roasting pan or baking dish with foil over top until green pepper is slightly soft. Olives may also be placed inside with meat mixture, if desired

I answered this before with a recipe... I make a mixture similar to meat balls, ground beef, bread crumbs, milk, egg, salt, pepper, some cooked rice, fill pepper halves, place in casserole with tomato sauce 1/4 up peppers and bake @350, covered about 1 hour, uncover, check pepper for doneness and continue baking if necessary. Serve with a salad and some fresh bread.

Seed the peppers, flatten the bottoms, and place on a baking sheet. Preheat oven to 350. Meanwhile brown ground beef, and cook white rice. When rice and meat are done combine with tomato sauce if you want. (I wouldn't use it.) some garlic and onion, salt and pepper, and top with whatever cheese of your choice. Bake in oven for 30-40 minutes until cheese is melted and bubbly.

That's how I make mine. You could also use red peppers too.

4 medium green bell peppers
8 ounces ground pork sausage
1 1/2 cups chopped onions
1/2 cup chopped celery
2 teaspoons minced garlic
1 1/2 cups cooked long-grain rice
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1/2 teaspoon Essence, plus more for seasoning, recipe follows
1/4 cup chopped green onions, green part only
1 tablespoon chopped parsley leaves
2 tablespoons fine dry bread crumbs
2 tablespoons grated Parmesan
4 teaspoons unsalted butter

Preheat the oven to 400 degrees F.
Cut off the top quarter of each bell pepper and reserve. Scoop the seeds and veins out from the inside of each pepper and discard. Set bell pepper shells aside. Remove and discard the stems from each bell pepper top. Dice enough of the bell pepper tops to make 1/2 cup. Set aside.

In a large skillet, over medium-high heat, crumble and brown the sausage until cooked through, about 4 minutes. Add the onions, 1/2 cup diced bell pepper, and the celery. Saute for 4 minutes, or until the vegetables are soft. Add the garlic and cook, stirring, for 1 minute. Add the rice and mix well. Season with salt, pepper and Essence. Cook for about 1 minute. Remove from the heat and stir in the green onions and parsley. Season the insides of the bell pepper shells with salt and pepper, to taste. Spoon the rice mixture into the bell peppers.

In a small bowl, combine the bread crumbs and cheese. Season with a pinch of Essence and mix well. Sprinkle the crust over each pepper. Top each crust with 1 teaspoon of butter and place the peppers into an 8-inch baking dish or pan. Add just enough water to cover the bottom, about 1/3 cup. Bake for 25 to 30 minutes, or until the tops are crusty and brown and warmed through. Serve hot

There's many different recipes. I use the one that contains Zatarain's Creole Chicken Rice and seasonings, but unfortunately that recipe isn't on their site. It's slightly spicy and very good -- e-mail if you're interested in it and I'll look it up at home and send it to you.

Otherwise check out these recipes and pick one that appeals to you: http://allrecipes.com/Search/Recipes.aspx?WithTerm=stuffed+peppers I've had great luck with allrecipes, my only recommendation is using a recipe with at least 4 stars.

Good Luck!
