Bread Pudding
1/2 cup raisins
1/2 cup brandy or water
1/4 cup butter or margarine, melted
8-10 slices dry bread
1 cup packed brown sugar
1 teaspoon cinnamon
1/4 teaspoon allspice
3 eggs
1/4 teaspoon salt
1 teaspoon vanilla
3 cups milk, scald & cooled
Cover raisins with brandy or water.
Set aside.
Melt butter or margarine.
Break up bread, set aside.
Combine brown sugar, cinnamon, allspice.
Reserve 3 tablespoons of this mixture for topping.
Toss bread with remaining sugar mixture.
Pour melted margarine on before you toss the bread crumbs.
Your sugar mixture will stick better that way.
Place 1/2 of bread mixture in a lightly greased 1 1/2 quart baking dish.
Drain raisins, place 1/2 raisins over bread crumbs.
Repeat layers.
Combine egg, salt, and vanilla in a bowl.
Beat for 1 minute.
Add milk slowly.
Pour over mix in dish.
Let stand for 5 minutes.
Sprinkle reserved sugar mix on top.
Bake at 325F for 45 to 50 minutes.

Paula Deen's Chocolate Bread Pudding
1 (1-pound) loaf French or Italian bread, cubed
3 cups milk
1/4 cup heavy cream
1/2 cup coffee flavored liqueur
1 cup sugar
1 cup packed light brown sugar
1/4 cup cocoa powder
1 tablespoon vanilla extract
2 teaspoons almond extract
1 1/2 teaspoon cinnamon
6 eggs, lightly beaten
8 ounces semisweet chocolate, grated
Whipped cream (optional)
Preheat oven to 325 degrees F.
Lightly grease a 13 by 9-inch baking dish and place the bread in the dish. In a large bowl, whisk together the milk, cream, and liqueur. Using another bowl, combine the sugar, brown sugar, and cocoa powder and mix well. Add the sugar mixture to the milk mixture and mix well. Add the vanilla and almond extract, and cinnamon to the beaten eggs. Combine the egg mixture to the milk mixture and mix well.
Stir the grated chocolate into the mixture. Pour the mixture over the cubed bread in the pan. Let the mixture stand, stirring occasionally for approximately 20 minutes or until bread absorbs most of the milk mixture. Bake pudding for 1 hour or until set. Check pudding by inserting a knife through the middle and it should come out clean.
Serve the pudding warm, or refrigerate and serve chilled with whipped cream if desired.

Here is a very good and easy bread pudding recipe one i always use...
Bread Pudding...
6 slices day old(or older) bread...toasted
2 tablespoons creamery butter; melted
1/2 cup raisins (optional)
4 eggs beaten
2 cups milk
3/4 cup white sugar
1 teaspoon ground nutmeg
1 teaspoon vanilla
Preheat oven to 350 degrees
Stack toasted bread and cut into small squares. put into a small casserole dish or an 8 inch square pan. Drizzle with melted butter. Sprinkle with raisins.
In med. bowl, combine eggs, milk. sugar, nutmeg and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking in the egg mixture.
Bake in preheated oven for 45 minutes; or until the top springs back when lightly tapped.
Bread will expand....
This recipe is so easy and very good.

Amaretto Bread Pudding
For Pudding:
1 lb. (16 oz.) loaf French bread
(Jewish egg bread is even better)
1 quart half and half
2 tablespoons unsalted butter
3 eggs
1 1/2 cups granulated sugar
2 tablespoons almond extract
1 tsp. vanilla extract
3/4 cup sliced almonds
For Amaretto Sauce:
8 tablespoons unsalted butter
1 cup powdered sugar
1 egg, well beaten
4 tablespoons Amaretto liqueur
Instructions:
For The Pudding:
Break up bread into small pieces. Place in medium bowl and cover with half and half. Grease (use the butter) a 9x13 inch baking dish. Beat together eggs, sugar and extracts and fold into bread mixture. Gently fold in almonds. Spread mixture evenly into baking dish, set on middle rack of oven (preheated to 325 degrees F) and bake 50 minutes or until golden brown. Cool.
For The Amaretto Sauce:
Stir butter and sugar in double boiler over simmering water until sugar is dissolved. It takes a few minutes and looks like the sugar is not mixing in correctly, but it will turn creamy and smooth when it's heated enough. Remove from heat.
Slowly add the egg (whisking constantly) into heated mixture and continue mixing until it comes to room temperature. Add amaretto.
Cut bread pudding into squares and spoon sauce over each serving.
Makes: 10 servings

Baby Bread and Butter puddings.
6 med slices of bread crusts remove
4 teaspoons of low fat spread
1 tbsp candied mixed peel (optional) 50gr sultanas or raisins
grated zest of 1 lemon or orange
500ml milk
3 tbsp light brown sugar
2 medium eggs.
Using scone cutters, cut 12 discs out of the bread to fit inside 4 medium sized ramekins, spread the bread lightly with thelow fat spread. Grease the insides of the ramekins lightly, mix the peel if using with the sultanas and grsted zest. Place a bread disc in the bottom of each ramekin, divide the fruit mixture evenly among the ramikins, repeat and top with a bread disc with the spread side up.
Bring the milk to the boil with the soft brown sugar, stirring until dissolved. remove and cool for 5 mins.
Meanwhile bet the eggs in a heat proof bowl, add the sweet milk to the eggs and beat well, slowy pour the mixture over the filled ramekins and down the insides.
Leave for about 1/2 an hour to allow the liquid to sink into the bread. Preheat the oven to gas mark 5 /190c/ 375f. Stand the ramekins in a small roasting pan filled with hot water which comes 2/3rds of the way up the dishes. Bake for about 20-30 mins or until risen and golden and crisp on top. stand for 5 mins before serving.

Doughnut Bread Pudding
2 dozen Krispy Kreme (I prefer Lamars) doughnuts torn into little chunks. I prefer the crullers because of the texture.
3 eggs beaten
1 can sweetened condensed milk
Vanilla to taste
½ stick melted butter
Cinnamon to taste
Use a 13 x 9 glass baking dish.
Heat oven to 350ºF
Put doughnut chunks into large bowel.
In a separate bowel, beat the 3 eggs. Add condensed milk, vanilla and beat together.
Pour egg mixture, melted butter and cinnamon into doughnut chunks and stir.
Now comes the part where you make your bread pudding unique. Add a cup of raisins, or a cup of dried fruit of your choice. Add a cup of pecans, a little nutmeg, any and/or all or none of the above.
Now you have another choice to make. The mixture is too dry so you can either add a can of fruit cocktail (or fruit of your choice) or if you don’t want fruit in your bread pudding, add milk a little at a time until the mixture looks like a lumpy cake batter.
Pour into baking pan and bake for approximately 30 minutes. Check with a toothpick. If not done bake for another 5 minutes, etc.
Remove and let cool. If you think it looks naked you can drizzle chocolate syrup, glaze, or some type of frosting on top.
Chocolate Bread Pudding
Ingredients
3 cups semi-sweet chocolate chips, divided
4 eggs
1 cup firmly packed light brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon vanilla extract
1/4 cup Kahlua or brandy
2 cups milk
4 cups cubed stale bread
Instructions
1. Preheat oven to 350 degrees. Grease an 8 1/2-by-4 1/2-inch (6-cup) loaf pan.
2. Melt 1 cup chocolate chips and set aside to cool slightly.
3. Whisk together eggs, brown sugar, cinnamon, nutmeg, vanilla, melted chocolate and Kahlua in a large bowl. When very smooth, stir in milk and mix well. Add bread and let stand for 30 minutes. Stir occasionally to make sure bread is evenly soaked.
4. Ladle half the bread mixture into loaf pan. Spread remaining 2 cups chocolate chips on top. Ladle remaining bread mixture over chocolate chips.
5. Bake for about 55 minutes or until center is set. Cool.
Serves 6 to 8.

Very easy bread pudding
Ingrediants
4 slices buttered toast
1/3 c. raisins
2 eggs, slightly beaten
1/4 c. sugar
1/8 tsp. salt
1 c. Pet milk
1 c. boiling water
1 tsp. vanilla
1/4 tsp. cinnamon
Recipe
Put buttered toast into greased dish. Sprinkle raisins over toast. Pour eggs, sugar, salt, milk, water and vanilla over the toast. Sprinkle with 4 tablespoons sugar and cinnamon. Bake at 350 degrees for 30 minutes.
