Hollandaise Sauce
INGREDIENTS
3 egg yolks
1/2 lemon, juiced
1 teaspoon cold water
1 teaspoon salt
1 teaspoon ground black pepper
1/2 cup butter
DIRECTIONS
In a small bowl, whisk together egg yolks, lemon juice, cold water, salt and pepper. Melt butter in a saucepan over low heat. Gradually whisk yolk mixture into butter. Continue whisking over low heat for 8 minutes, or until sauce is thickened. Serve immediately.
Note
If your sauce breaks and the butter and egg begin to separate, simply remove from the heat, add a splash of cold water, and whisk very fast. This should save your Hollandaise.
If you want a recipe that uses hollandaise sauce then try this one it is so yummy:
1 lb chicken cut up
1 package cream cheese
2 cups colby and monterey jack cheese
tortilla shells
hollandaise sauce
brown chicken and drain return to pan, add cheeses and cook until they become bubbly and thick, fill tortilla shell with chicken mixture, wrap tortilla and top with hollandaise sauce.

Blender Hollandaise Sauce
2 egg yolks
1-2 tablespoon lemon juice
1 dash cayenne pepper
1/2 cup butter, melted
Place egg yolks, lemon juice and pepper in blender container and blend until lemon color.
Turn blender to high and very slowly add butter, blend until thick, about 30 seconds.
To serve, heat sauce slowly in top of double boiler over hot water.
An excellent addition to cooked veggies, fish or poached eggs.
To reheat in the microwave: Pour the sauce into a microwave safe glass measuring cup.
Heat at 30% power until heated through, stirring after every 30 seconds.

Yes - go to your grocery store, pick up the McCormick Hollandaise Sauce packet next to the graveys, mixes, etc and follow the packet. It's spectacular!

Here's mine, but you can't fudge the amounts. I tried it once trying to make it more lemony and it was a disaster.
3 egg yolks
1 Tbsp fresh lemon juice
1/2 cup real butter, divided (no margarine)
Whisk the yolks and lemon juice together in a small saucepan over medium to medium low heat. Add 4 Tbsp butter and whisk until all melted. Whisk in 1 more Tbsp at a time until melted until the butter's all used.
It's a little labor intensive, but really good. It should be creamy and not grainy. If it "breaks", then add a Tbsp of hot water and whisk a lot and it should come back.
