Don't cut them all into steaks.
Make a small prime rib if the ribs are intact.

You will not get very well shaped steaks unless you use a saw to cut through the bones. You can get a bone saw at some sporting goods stores (hunting equipment) and some larger kitchen supply stores. You then slice the meat and fat with a sharp butcher knife, then saw through the bone as a contiuation of the cut you made in meat.

If you do not want to do it that way you should bone the loin first, then slice the thickness you like it. Use the bones for bbq ribs.

In either case partially freezing the meat will make it easier to handle.

Steak is great all around, but the most tender cut is definately a Filet Mignon. If it's a good cut and cooked right, it just melts in your mouth!

Put it in the freezer, just long enough to firm up. That way it will not wobble around as you cut it down, and will be easier to handle. Wrap in Glad wrap meal sized numbers and freeze.

Uh, make sure you have a sharp knife. Wrap in butcher wrap, tape well with freezer tape and mark it. We do this all the time, no big deal. 20 lbs is nothing.
