what is the easiest meal to prepare with this? chopped up bbq or any other suggestions?

I'm a bbq fan from way back, and you have the fixins for
some mighty serious chowin down. Ya could make a stew,
hot pork sandwiches, or slice and stuff it like stuffed pork
chops I suppose.

There are several different meals you could make. Besides cubing some up or shredding it for BBQ, you could also make some pork fried rice, or do a breakfast dinner meal with pork loin as the meat instead of bacon or sausage. Breakfast dinners are a nice change. Whatever you decide to prepare, enjoy!

slice thinly and cook with bbq sauce to make "pulled pork" sandwiches.... sort of like pork sloppy joes.

It's easy and good. Also, it prevents the cooked pork loin from drying out, which it has a tendency to do when you reheat.

- Chop them into small pieces and make Chinese fried rice (with scrambled eggs, spring onions, carrots, peas etc.)
- Stir fry with fresh veggies (julienned carrots, bean sprouts, broccoli etc.) and add a dash of oyster sauce and rice wine for an Oriental touch
- Stir fry with veggies of choice and use as topping for chow mein noodles
- Cook with bbq sauce and turn into a pork sloppy joe
- Pork fajitas! Season pork with cumin, chili and oregano. Add bell peppers, onions, sour cream and salsa in tortillas.

Pork Fried Rice would be good.
I did that with some leftover rice and a pork tenderloin I cooked a couple of weeks ago. It was delicious and my son just raved about it.

I make a "gringo" green chili this way...

Buy some green salsa (salsa Verde). Dice the pork, add to the salsa and heat thoroughly.

Serve over cooked brown rice or hash browns and eggs.

This freezes and reheats very well.

*********GREEN PORK CHILI

1/4 c. flour
3 cans hot green chilies or 1 can diced peppers (mild-med.)
Garlic powder, to taste
Salt and pepper, to taste
Taco seasoning, to taste
Chili powder (1 tbsp.) or to taste
1 pkg. pork loin, chops, or left over pork roast, diced or shredded

Easiest is to just warm it back up and serve it as if it wasn't left over.

oh yeah! bbq sandwiches, shred it for burritos...dice it up & put it in an omlette or scrambled eggs, toss into pasta, lots of stuff! have fun
