Yellow crookneck, zuchinni, whatever. Any creative ideas?

My mom likes to slice yellow squash and saute with scrambled eggs, and butter. I don't like it this way though.

I slice my yellow squash and saute in butter and olive oil, and top with lot's of freshly grated parmesan cheese.
Or you can use both zucchini and yellow squash, layering in a casserole dish with melted butter, breadcrumbs, and cheese.
Or make zucchini bread, or zucchini boats with diced tomatos, mozzarella cheese, and garlic. Roast in oven..

Those are just a few things that I do..

We chop the squash (crookneck, zuccinni, patty pans), with onions and garlic. We add spices (oregano, salt, pepper, whatever you like) and wrap it in aluminum foil. Then we grill the package until done. Very tasty and great for summer barbeques!

Yum I love summer squash!
My favorite recipe is zucchini which is cut in half and covered with mexican or cheddar shredded cheese and a little cayenne pepper then baked. And of course any type of summer squash sauteed with onions and seasoned with olive oil and salt and pepper.

Chicken fried!

Slice the squash about 1/2" thick.
Dip each slice in:
Milk (seasoned with tabasco, worchestershire, etc if you like)
Flour (seasoned with salt and freshly ground pepper)
Beaten eggs
Cracker or dry bread crumbs.

Fry in at least 1/4" of butter until golden brown on both sides, carefully turning only once.

Cut slices into halves and sautee them with EVOO and onions in a 12 inch skillet. Add fresh or canned cut up tomatoes, Garlic to taste, Italian seasoning, salt and pepper. Top with grated cheese (Parmesan/Romano) and you have it.

********CAMP SQUASH CASSEROLE
2 cans squash, drained
2 eggs, beaten
1 stack crackers, crushed
1 sm. onion, chopped
1 tsp. pepper
Salt to taste
1/2 lb. Velveeta cheese, grated
Combine all ingredients and pour into greased casserole dish. Bake at 350 degrees for about 40 minutes.

I like to make thick slices on the bias. I will put them in balsamic vinegar for 15 minutes and grill on the BBQ. Be careful you have to watch them as they burn easily.

I slice mine into rounds, then roast them in the oven with garlic, olive oil, salt & pepper.

Or, I'll slice them lengthwise and grill them.
