I have a party to go to & am supposed to bring a side to share. I don't want to bring BORING same 'ol, same 'ol baked beans or pasta salad or potato salad.
Anyone have anything YUMMY & Easy to feed around 50 people?

Homemade cucumber salad
[Best-tasting when its made a day or two before you plan to serve it.]:
AND this is inexpensive, relatively easy to make, cold and refreshing:
18 to 24 cucumbers: peeled with a potato peeler, seeded [with a knife, cut them in half length-wise and scoop out the seeds with a teaspoon] and slice about 1/8" to 1/ 4" thick - they don't have to be exact;

3 to 4 Large onions: peeled, thinly sliced [cut them in half and with the flat side, down, thinly slice the halves - you don‘t have to slice them thin enough to look through - just as thin as you can slice them.

Food processor?
You want it to look pretty, don’t you?
OH! OK. Coarse chop. Cukes, too?

About Wednesday or Thursday, make a small batch [about 2 cukes]. Look at it. Taste it and see how well you like it. After tasting it, and you like it, make the rest.

After slicing, THEN cut the halves again. This makes four crescents.], sugar, white vinegar and JUST enough cold water to cover. Put the container or containers in the refrigerator.
It should have a sort-of sweet and sour flavor.
Too sweet? Add a little vinegar.
Too sour? Add a little sugar.
Want a little color? Just for fun, dice a sweet, red pepper. Great color. Adds little taste.





Homemade cole slaw:
[Best-tasting when its made a day or two before you plan to serve it.]:
About 4 heads to 6 heads of green cabbage. Peel the outer green leaves and throw them away.
Cut the heads in 1/2 THEN cut those halves in 1/2 . Cut-out that hard white core and throw it away. Thinly slice the cabbage.

When its all sliced, add mayonnaise to the degree of "wetness" you desire. Did you wash your hands? Go ahead, use your hands.
[start with one quart, mix it in. Too dry? Add some more mayo], salt and pepper - preferably white pepper to taste.
IF you use white pepper WATCH how much you use. White pepper is stronger than black pepper!

What’s that? Oh, you want carrots? Sure, wash and peel a carrot - or two. Grate the carrots on a box grater. WATCH THOSE PRETTY FINGERS!

No box grater?
It’s a square-looking thing with different sized holes and slots on all four sides and a handle on the top. Check the dollar store.

Oh! You want to use a food processor? You can use it for the cabbage - chop the cabbage a little on the coarse side.

I wouldn’t recommend it for the carrots. The carrots will “bleed” - the orange carrot juice will come out of the carrot - and make your fresh-made cole slaw look yellow/orangish or “old”.

These aren't hard to make. They're pretty easy.
AND if one or both doesn't turn out the way you expected, you have the recipes to make again - a little better - next time &&&& you can always go to the market or deli and buy the store-made, can't you? (((BUT, if you decide to do this, bring your credit card and/;or checkbook and/or C-A-S-H)))

BUT I'm not sure they will be as delicious as what you're going to make - will it? - or they?

Here is a recipe for oriental coleslaw. It is super easy to make and can be made a day ahead of time. You'll have to double or triple this recipe but I promise it will be a huge hit. Everyone who taste this asks me for the recipe.

Oriental Slaw

2 pkgs Ramen Beef soup mix
1 lb. Slaw mix
1 cup slivered almonds, toasted
1 cup sunflower kernels, roasted
1 bunch green onions, chopped

Layer: Noodles crushed on bottom of casserole
Slaw
Toasted almonds
Sunflower Kernals
Onions

Dressing: Mix ingredients well
2 pkgs flavoring from soup
1 cup oil (canola oil)
½ cup sugar
1/3 cup white vinegar

Pour over layered salad….DO NOT STIR SALAD YET. Marinate overnight. Stir before serving.

Note: Do not stir salad until an hour or so before serving. Do not make more than 24 hours in advance or noodles get soggy.

I'm going to cheat and give an answer I've already used today!

Take several cucumbers and slice them thinly. Slice a few onions equally thin. Put enough vinegar to cover the veggies in a pan. Bring it to a rolling boil, and add 1/2 cup sugar. Stir until sugar dissolves completely, then remove from heat. Pour directly over veggies. Cover and let stand until cooled slightly. Store in refrigerator for at least 2 days. Serve on a relish tray with celery sticks, cheese cubes, pepperoni (or a meat of your choice), and cherry tomatoes.

They taste great, and make a beautiful and interesting tray. No one else will bring something as "different" as this, and it's something that just about everyone can enjoy!

When I have to bring something easy I usually do a corn casserole. Its super easy and its always gone before everything else.

1 stick butter
1 box Jiffy corn muffin mix
1 can cream style corn
1 can whole kernel corn (DRAINED)

Melt the butter in the microwave and stir in the corn muffin mix. Then add the cans of cream style corn and whole kernel corn. Add salt and pepper to taste. Cook on 350 until the center is firm. Should take 30-45 minutes for 1 recipe. You can stick a toothpick in the center like a cake to check. This is enough for about 6-8 people and I use an 8x8 pan. You can double or triple it and use a 13x9 pan. I usually use a glass pan and grease it slightly.

BUBBLE PIZZA

Use the biscuits in a can to line the bottom of a large baking pan 9 x 13 (will take one an of biscuits). Pour pizza sauce on top and spread. Add whatever your heart desires, such as pepperoni, sausage, veggies, etc. Then add grated mozarella cheese to cover. Bake at 375 for about 1/2 hour or until the biscuits appear to be done.

I have used this many times and everyone seems to love it.

Stuffed mushroom caps

Just break off the stem and scoop out the gills

The fillings are endless

You can fine dice the stems, saute, cool and mix into the stuffing too

PS. If the beans, potato salad and pasta salad are boring you could learn better recipes for those.

********Marmalade Meat Balls

Ingredients
2 pounds fully cooked frozen meatballs
1 bottle (16-ounce) Catalina salad dressing
1 cup orange marmalade
3 tablespoons Worcestershire sauce
1/2 teaspoon red pepper flakes

Instructions
Place frozen meatballs in the insert of a slow cooker. In a bowl, stir
to combine the remaining ingredients. Pour over meatballs and stir to coat. Cook on high setting for
2 to 3 hours.

To feed large group 75 double. You may need to use to crock pots.

FRESH SPINACH AND STRAWBERRY SALAD

12 oz. torn fresh spinach, about 10 c.
3 c. halved or sliced fresh strawberries
1/3 c. sliced green onions
1/3 c. salad oil
3 tbsp. lemon juice
1 c. broken walnuts
2 tbsp. sesame seeds

In large bowl place spinach, strawberries and green onions. Cover for up to 2 hours.
Shake together oil, lemon juice, chill. Shake before pouring over salad. Top with nuts, sprinkle with seeds. Makes 8-10 servings.

Just triple this recipe and you should have enough for 50 people if your dinner is potluck...People will take smaller servings.

it might take you a little bit but i always make tuna rollups.
really easy and only 3 ingrediants.
3 cans of tuna per 1 8oz pkg. cream cheese.
mix that together and spread a thin but reasonable layer on a flour tortilla of your choice and then roll it up. cut into bit size pieces and put a toothpick in them. very easy and very addicting. and you can even change stuff or add stuff to it if you want, like chopped green onion or some kind of spices., or used canned chicken instead, or mix the 2!

I THINK THERE IS MORE TO THIS STORY THAN YOU ARE SAYING. You “allow” her to work and have friend? She should not need your permission to do these things. You keep calling the other lady “young and tight”, something tells me you were doing more than just friendly talk and she had enough. Sounds like you are both volatile and I think her family has had enough with you. Of course her family is going to side with her and if your wife is sick of your behavior then she is going to run to her family for support. I think what did it was putting your hands on her. This is not an issue of right and wrong, this is an issue of go see a marriage counselor.
