Make some food ahead of time - like meatballs and spaghetti, a casserole, a rice dish... anything you can freeze and keep in a plastic container - then you can warm in a pot over that cozy campfire!
Take some potatoes with you and cover them in foil. set on the hot burning wood of the fire for a couple of hours. Turn around a few times to prevent scalding and enjoy your fav toppings! mmmm chilli!

cook what you or your family likes best and freeze it, put it in you cooler along with drinks etc. You should have a heavy cast iron cooker or skillet in your camp gear. You can put those on the fire to thaw your food. You can do a camp breakfast, sausage, onion, cheese bell pepper and eggs. Put the sausage in to brown first and add the other raw things and last the cheese and eggs. Take an iron pot and put it over some briquettes in a little dug out pit. Put some beef chunks and onion, carrots beef stock and lots of tater chunks and let simmer and it is delicious. The prep can be done before you leave for the trip and put in cartons and in the cooler. Or you could cook a roast and grind it and add pickle, mayo and mustard and onions and have sandwich's for lunch. Many things that are great out camping. Chili is good when it gets cool at night, make before hand and freeze for the cooler. Catch your own fish, take some flour in a baggie and some cooking oil and don't forget salt and pepper. You can do dinner in foil. You put a hamburger patty, cut up carrots and potatoes and a little chopped onion. You can add other desired veggies (enough for one) onto a sheet of heavy aluminum foil. Top with salt and pepper and other desired seasonings, such as season salt or celery seed or garlic salt.
Bring up two sides of the foil sheet and fold down over and over tightly against the meal. Seal the other two edges tightly to form a rectangle. Put the individual packets down into the ashes of the campfire, on the sides, not directly in, the flame. covering carefully with hot ashes. Let the packets cook for at least 20 min. and enjoy.

CAMP STEW
4 lb. beef
4 lb. potatoes
4 lb. onions
4 cans tomatoes
4 cans cream style corn
4 cans baby lima beans
2 bottles catsup
1 tbsp. prepared mustard
1 1/2 lemons, cut up
1/2 c. Worcestershire sauce
Salt and pepper to taste
Boil the beef until well done and set aside to cool. Peel and dice the potatoes and onions and place in a large kettle. Add the tomatoes, corn, beans, catsup, mustard, lemons and Worcestershire sauce. Pull the beef from the bones and add to the potato mixture. Season with salt and pepper. Cook, stirring frequently, for about 2 hours or until done. Other meats may be substituted for beef. Camp Stew may be frozen.
CAMPING CASSEROLE
1 lb. ground beef
8 or 10 oz. dry noodles
1 qt. tomato juice
1 can mushroom stems and pieces
Cheese
Brown ground beef in large skillet or Dutch oven (season to taste). Add dry noodles.
Cover with tomato juice (the amount can be varied to cover all the noodles). Add mushrooms. Cover and simmer for approximately 20 minutes. Top with your favorite cheese and let set for a few minutes.
This is an excellent camping main dish as it takes only one pan and can easily be prepared on a camp stove

Sandwich goods can go a long ways, but they require a cool yet dry location in which to store them, else your bread can become soggy.
You might give the canned variety of meats and such a try. You would be amazed how well a can of chili cooked over the fire, or a can of vienna sausages would go with camping, and they stay quite well in the elements without fear of spoiling. PB & J works as well.
The worst thing is avoiding the insects through it all, as they enjoy your meals as much as you do.

I love to cook veggies on the grill. I cut them up (whatever kind you happen to have around), put them on a sheet of aluminum foil and add some butter salt, pepper, garlic powder. Make a packet out of the foil and put on the grill on medium heat for about 20 minutes. Open and serve.
You can do this with potatoes and onions too. Whatever your little ole heart desires. You can add some shrimp, or even chicken breast meat if you wish. I sometimes even add some kielbasa cut up in it.

Cut up potatoes and cook in oil in foil over fire. You can put a hamburger patty in the middle of it if you like and have what we call hobos. Wrap corn on the cob with butter and cook in hot coals in fire. Most vegetables. Have fun on your camping trip. sounds like fun.

Dave’s Dutch Tamale Pie
Dave Herzog
1 lb. ground turkey (try lean ground round)
1 ½ Tbs. chili powder
½ tsp. cumin
1 tsp. fajita seasoning
2 Tbs. garlic, minced
1 28oz. can diced tomatoes
1 15 oz. can whole kernel corn (try hominy, YUM!)
1 8 oz. can diced green chilies
1 ½ c. shredded Colby cheddar cheese
½ c. chicken broth
1 12 oz. box corn muffin mix (12 oz. Aunt Jemima corn bread mix from a 5 lb. bag)
½ c. milk
2 Tbs. melted butter or vegetable oil
1 large egg
In a 12” deep Dutch oven, brown turkey with chili powder,
cumin, and minced garlic. Add tomatoes, corn and chilies. Stir well. Add broth, stir. Layer cheese over the top of meat mixture.
Mix corn bread mix, milk, butter, and egg. Spoon over turkey mix and cheese evenly. Cover and bake at about 375o for 35 to 45 minutes until bread is firm and baked through.
Serves 6
Mountain Man Breakfast

12” Dutch oven
12 coals bottom, 15 coals on top
1 28 oz. bag hash browns
1 lb. bacon
1 large onion, chopped
1 green pepper, diced
2 c. mushrooms, sliced
18 large eggs
1 8 oz. package shredded cheese
1 16 oz. bottle salsa
1) Brown the bacon in the D.O. and drain off the excess
grease.
2) Mix all the ingredients in the Dutch oven except the cheese and salsa.
3) Cook at 350o for 50 to 60 minutes.
4) When it is cooked, pour the salsa and cheese over the
top and heat for 5 more minutes.
Serves 6 to 8
2002 Salt Lake City Olympic Peach Cobbler

1 large can sliced peaches, undrained
1 box spice cake mix
¾ can lemon-lime soda (Sprite or 7-Up)
In a preheated and oiled 12” Dutch oven, pour the peaches into the bottom. Sprinkle the cake mix over the peaches. Do not stir! Drizzle about ¾ of a can of soda over the cake mix. Cover and bake at 350o for about 35 to 45 minutes.
Serves 6 to 8

all you need is bread, butter and your fav. sandwich stuff. My kids love pizza ones. I get jarred pizza sauce pepperoni and mozz. cheese. put it in a mountian pie maker or use 2 cast iron skillets and mush the sandwiches till warm and melty.
I also make chili in a cast iron skillet that is cheap.
Corn... keep in husk and put on the grill area of the fire. yummy.
