I used a top shoulder (crown roast) and it didn't turn out so tender. I cooked it 3 hours.

Chuck is the best. What you can do is either put the roast in a crock pot and let it cook all day, that will make it tender. Or put it on the stove and cook on a low burner with its juices, keep a good eye on it so it doesn't dry out. That's why I like the crock pot, it keeps all the moisture in and the roast comes out juicy and tender:~)

The best cuts are sirloin or striploin. Expensive but worth it, melt like butter on your tongue. Cook at 220 for 15 minutes then reduce to 170 for 20 mins per pound (or 500g).

I like chuck roast....it has a little more fat than others, and that makes sure it stays moist.
