Lemon chicken
Slice 3 red onions and 2 cloves of garlic and scatter over a large roasting tin.
spray with low fat cooking spray, place chicken quarters on the tray remembering to take off the skin, Add 1 sliced lemon and use another to juice over with 300ml hot chicken stock. Place in the oven at 200c/400f gas mark 6 and bake for around 40 mins or until the juices run clear, Serve with steamed veg or salad and mashed potatoes to mop up the juices.

Leg quarters have really good flavor.
I like to bake them in the oven with barbecue sauce. Cover with foil and takes about an hour on 350. Near the end take the foil off and let them brown up a bit.

I recommend that you Bar-B-Que them on the grill, this is what I do.
I thin the Bar-B-Que sauce a little, then I inject it into the legs with one of those big basting needles. I shoot it up in several locations. Wrap your legs in foil with your seasonings like salt, pepper and garlic powder, top with Bar-B-Que sauce. Wrap well in foil, because chicken on the grill likes to catch fire. Cook on low, check every 15 minutes or so, turn chicken over and season the other side and continue cooking until done. It won't take more than about 30 minutes to get done.
Serve with scalloped potatoes
Peel potatoes and slice for scalloped potatoes. Melt about two tablespoons of butter in pan, add potatoes, chop some onion add onion. Add salt, pepper, and garlic powder. Brown a little, turning at least once.Now add about 1/2 cup of milk. Let potatoes cook until tender. Top off with your favorite cheese, grated. I like cheddar and muenster.

mix up about a 1/2 cp of balsalmic vinegar and 2 tbs honey. Spoon mixture all over chicken while in the pan. Bake for about 20 minutes. Flip chicken over and spoon the mixture that's in the pan over that side, and put extra honey on it, and bake until the chicken is done. My family LOVED this. My 6 yr old even liked it. He said it was better than his uncle's chicken. :)

CHICKEN NOODLE SOUP
4 chicken hind quarters
1 onion (chunked)
1 stalk celery (chunked)
2 carrots (chunked)
3 qts. water
1 tbsp. dried parsley
2 tsp. garlic salt (McCormick's)
1 tsp. black pepper
1/4 tsp. cayenne
2 c. noodles
Purchase fryer hindquarters in bulk, they are cheaper and always include extra chicken fat, freeze what you don't use. Put hindquarters in stew pot with vegetables and water. Bring to a boil. Reduce heat, cover and simmer until meat is tender and can easily be removed from the bone. Remove the meat and any chunks of fat. Set aside to cool, discard fat. Skim off fat from top of soup and discard.
Remove vegetables with a slotted spoon and place in a blender. Add 1 cup of the liquid. Chop vegetables, return to pot. Discard skin and fat from chicken and remove meat from the bone. Cut chicken into small chunks by slicing across grain, add to pot. Stir in seasonings. Bring back to a boil. Add noodles and cook (stirring occasionally) until done (about 15 minutes).
