Hello! This recipe is to die for! You have to have this at your Pretty In Pink Party.

Pink Champagne Granita with Cherries
1 cup sugar
1 cup water
4 cups pink champagne
Pinch salt
2 cups fresh cherries or berries

In a small heavy saucepan mix the sugar and water. Bring to a boil, stirring constantly until the sugar is dissolved. Turn the heat off and let the syrup cool to room temperature. Add the champagne and salt to the sugar syrup and mix well. Pour the mixture into a medium flat pan. Freeze for 20 minutes, then vigorously stir the mixture with a fork, scraping the sides well. Repeat, mixing about every 20-30 minutes, or until the granita is firm. The time will vary depending upon the champagne you use and how hard you want the granita to be. To serve, scrape the mixture from the pan with an ice cream scoop. Serve immediately in chilled glasses and top with the cherries. The granita can be made in advance, simply let the granita sit at room temperature for 5-10 minutes or until the mixture is soft enough to scrape easily.
Makes 4 Servings.

ENJOY!

Make a strawberry triffle. Here's a simple yet pink recipe I've made before:

about half a bottle of non-alcoholic Strawberry daiquiri mix
1 container Cool Whip (or similar dessert topping)
1 container of strawberries, halved or sliced
1 pound cake or angel food cake, cubed

Fold the daiquiri mix into the Cool Whip a little at a time (you don't want to add too much liquid, just enough for it to be good and pink).

Place a layer of cake cubes in the bottom of a large triffle dish (or similar glass bowl). Cover with a layer of strawberries, and then a layer of pink whipped cream mixture. Continue layering cake, strawberries, and whipped cream until you reach the top of the dish. Finish with a layer of whipped cream.

Garnish with strawberries, and chill for about 3 hours before serving.

Take a vanilla cake mix and dye it pink, then bake it in a 13 X 9 pan. While the cake is baking, take a large container of strawberries and cut them into bite size pieces. Then make vanille instant pudding and dye that pink. Put the strawberries and the pudding in the fridge while your cake is still cooking. When the cake is done let it cool. Once it is cool, cut the cake into 1 inch squares. Then take out the pudding and strawberries and a large bowl. Take the pieces of cake and put a layer of cake in the bottom of the bowl. (you only want to use about half of the cake) Then put a layer of pudding (only use 1/2) and a layer of strawberries(Use 1/3 of the strawberries). Then repeat those three layers. Then dye a large container of cool whip pink and put that on top of the last layer. Then put the last 1/3 of strawberries on top. This is really delicious and easy. I have been asked to make it for many occasions. You can also add blueberries and rasberries if you are making it for another occassion. E-mail me if you want better instructions.

Pink Ladies

INGREDIENTS
1 cup all-purpose flour
3 tablespoons white sugar
1 tablespoon unsweetened cocoa powder
1/2 cup butter
1 (14 ounce) can sweetened condensed milk
2 cups chocolate chips
1 1/2 cups confectioners' sugar
3 tablespoons butter
3 tablespoons maraschino cherry juice
1 (1 ounce) square semisweet chocolate, chopped
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking pan. In a medium bowl, stir together flour, white sugar, and cocoa powder. Cut in butter until the texture is mealy. Pat into the bottom of the prepared pan.
Bake for 10 minutes in the preheated oven. In a saucepan over medium-low heat, combine the sweetened condensed milk and chocolate chips. Cook, stirring frequently until chips are melted and the mixture is smooth. Pour over the baked crust.
Return to the oven, and bake for 15 minutes. Remove, and cool in the pan over a wire rack.
In a medium bowl, mix together the confectioners' sugar, butter, and cherry juice. Spread over the cooled filling in the pan. Melt semisweet chocolate in a small glass dish in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth. Place in a plastic bag or piping bag, cut the tip to 1/8 inch, and drizzle the chocolate over the bars in a back and forth motion to make stripes. Cool completely before cutting into squares.

Cheesecake tinted pink. Or with swirled in pureed berries.
Or sex in a pan using pink coloured vanilla pudding.
