is it olive, canola and flaxseed?

Definitely not canola. Canola is great though, because it has a very neutral flavor, and helps foods brown better (such as plantains. If you fry those in olive oil, you'll be waiting for DAYS for those things to brown). It's also better for deep-frying.

Flaxseed oil contains 50% more Omega-3s per serving than an equal serving of fish oil (and tastes better) so it's a great substitute for those who don't like fish. It also contains Omega-6s, Omega-9s, potassium, magnesium, zinc, B vitamins, and a few other important nutrients.

Flaxseed is pretty expensive though. I wouldn't use it as a regular cooking oil... I'm not sure how well flaxseed oil would take to just being the frying oil, I use olive oil for that.

Olive oil is by no means unhealthy, however. It also contains lots of healthy fats, and doesn't break down as quickly as flaxseed oil.

I think that if you're trying to get more healthy fats into your diet, you should go with olive oil, and if your budget will allow it, flaxseed oil. Flaxseed meal is also available, which adds a great nutty flavor to things like pancakes and muffins.

Extra Virgin Olive Oil is best but for baking and frying I use Canola oil
