You would only need a little bit of vanilla extract to give it flavor, not enough to make the whole ice cream brown. Milk gives it the white color.

because ice cream is made with just that, cream, which is white to off white. If it was made with true vanilla then it would have black flecks in it, which would be the seeds of the vanilla pod, not the brown liquid. It would also taste better too.

Simply because extract is used, sometimes artificial. The really good ice cream has tiny black dots in it. Those are the vanilla seeds that give the distinctive aroma and flavour. Vanilla is the fruit of the wild orchid, cultivated in Tahiti, Bali, Mauritius and Madagascar. I love to cook with it, the REAL thing, not essence. Enjoy!

The way to tell if it is a high quallity ice cream is to look for the very small brown seads from the vanilla pod, if they are there the flavouring used has been real vanilla. If its a pure bright white then vanilla essence or chemical flavouring has been used

Some vanilla ice cream does have specks of vanilla bean in it but vanilla extract does not have to be brown. I have made my own vanilla extract by soaking vanilla beans in vodka. It is easy and fun to make your own.

I doubt most commercially made vanilla ice cream has ever seen a vanilla pod. I have made my own and the milk/cream has the vanilla pod infused in it so no trace of colour!

That's because the main ingredient (cream), dilutes the colour of the vanilla, as proportionally, there is a higher ratio of cream to vanilla.

The vanilla bean which is often used whole to give flavoring is taken out once the ice cream gets churned. Often the inner seeds of the vanilla bean are used which are very, very tiny.
