Pretty much the same things as you would put on a regular sandwich.
Lunchmeats, cheese, lettuce
Tuna or chicken salad and lettuce
Hummus, sprouts and veggies
Avocado and turkey
Corned beef and sauerkraut
Bacon, cheese and tomato

Whatever you like in a regular sandwich.

well of course there is the usual

lunchmeat
cheese
mayo
Lettuce, tomato, onion etc.

but you can also use things like...
cream cheese
pickles
pepperocinis
olives
artichoke hearts
spinach leaves
chicken
imitation krab meat
tuna salad
sprouts
cucumbers
chicken salad (good with the sprouts)
use honey mustard or poppyseed dressing sometimes instead of mayo.
you can even grate carrot up if you like or
maybe
sliced bell peppers?

when all else fails...

go to a few delis and grab their take out menus.
recreate their ideas in your home
