I'm Irish. I like potatos. I like that my lineage grows them, knows how to cook them, and eat them in great quanity. I love starchy, heavy, creamy, well made mashed potatos. I love french fries (well made, crisp, interesting infusions in the oils used in frieing the powerful food subtance). I love potatos latkes (some people have asked me 'wha" ? in confusion and I feel pain they have never had lard pan fried onion and potato latkes in the winter holidays and am stunned some people are deprived throughout thier lives.) I love them with a warm apfalwein while the air is freezeing because it bring christmas in Germany and at the markets with my husband and infant child picking a tree and lots of lights.

Who says I eat them often? and just because i have favorite recipes does not mean I lack moderation. Besides, once a week or everyday it's how your personal exercise and genetics are that inclines you towards diease, diet is relatively easy to control. How rude a observation. Lacking decent manners, I asked you about your prefeances. Obviously not a potato fan. Some people can never be pleased.

I'm Ukrainian, potato lovers, all. My fave use of the potato is with cheese as an ingredient in pyrohy (perogies - dumplings). I like a nice crusty roasted potato, and nothing beats a properly baked jacket potato.
Like you, I'm a lover of potato pancakes - lots of hassle to make, but I think maybe this Friday I'll make some. Have a big bag of potatoes to use...

I like two types of potatoes...

Russet potato (starchy and creamy) for mashed potatoes, hash browns and baked potatoes where you want the creamy fluffy interior.

Red New Potato (waxy, holds shape) for potato salads, cubed pan fryed potatoes. They hold their shape better and have a firm mouth feel.

Holiday recipes usually involve sweet potatoes. Sweet potato pie and sweet potatoes with marshmallow topping.

My favorite type of potato to eat is a red potato, but for cooking style I like to have them baked or mashed as my two favorite cooking styles.
