I make a pasta salad that people request now and it is always a hit.
You will need:
1 pound box of rotini pasta (or shells, if you prefer)
I bottle of Italian dressing (actually not the whole bottle - save about a third of it)
1 cup of Parmesan cheese
1 to 2 cups of broccoli florets (chop into small pieces)
3/4 to 1 cup of grape tomatoes (cut in half)
1 can of black olives (buy pre-sliced or slice them yourself (it is cheaper this way!)
Directions:
Prepare pasta as directed on the package
While your pasta is cooking chop your veggies.
Rinse the pasta and when it is completely cooled toss with dressing, cheese, and veggies. If it seems to dry too you, add more dressing. If it is too soupy then add some more cheese.
This salad is extra yummy if you make it the night before and then refrigerate it till the party. This gives it time for all the dressing to soak into the pasta and veggies so every bite tastes awesome. Give it a good stir and then add more cheese or dressing if needed.
Have fun at your potluck - you will have an empty bowl to bring home with you!

I have just the recipe book for you, (see below).
But you give no clues what you'd like, or your cooking skills.
Could be a salad, casserole, dessert, etc.
I'm going to suggest a college type appetizer: Oriental Wings.
Get 3 lbs of chicken wings, split & discard tips (or drumettes).
Arrange pieces in single layer in ungreased 3 qt baking dish.
Combine 1 cup soy sauce, 1/2 cup sugar, 1/2 cup water,
1/2 tsp salt, 1/4 tsp ground ginger, 1/4 tsp garlic powder.
Pour mixture over the wing pieces.
Bake uncovered in 350F oven for 1 1/2 to 2 hours,
turning pieces over at half-time, until tender.
Makes 36 wing pieces or 24 drumettes.
Variation: omit sugar & use 1/2 cup liquid honey.

An avocado salad is different and very healthy and is also a nice way to try them if you haven't yet.
2 or 3 avocados skins and seeds removed and diced
3 skinned plum tomatoes, diced
one bunch of green onions diced
one yellow pepper diced
one small cucumber diced
2 or 3 jalapeno peppers minced
a handful of cilantro minced
the juice of one lime
salt and pepper to taste
combine all ingredients and chill
tortilla chips to scoop up or crumble them into the salad

Potluck Lasagna
1 pound ground beef
1 (14.5 ounce) can Italian stewed tomatoes, cut up
1 (6 ounce) can tomato paste
1 tablespoon minced fresh parsley
1/2 teaspoon minced garlic
2 eggs
1 1/2 cups small curd cottage cheese
1 1/2 cups ricotta cheese
1 cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon pepper
6 lasagna noodles, cooked and drained
2 cups shredded mozzarella cheese
DIRECTIONS
In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, tomato paste, parsley and garlic; remove from the heat. In a large bowl, combine the eggs, cheeses, salt and pepper. Layer three noodles in a greased 13-in. x 9-in. x 2-in. baking dish. Top with half of the cottage cheese mixture, 1 cup mozzarella cheese and half of the meat sauce. Repeat layers.
Cover and freeze for up to 3 months. Or cover and bake 375 degrees F for 30 minutes. Uncover; bake 25-30 minutes longer or until edges are bubbly. Let stand for 10 minutes before cutting.
To use frozen lasagna: Thaw in refrigerator overnight. Bake as directed.
Potluck Chocolate Cake
1 cup butter or margarine
1 cup water
1/4 cup baking cocoa
2 cups all-purpose flour
2 cups sugar
1/2 teaspoon salt
1/2 cup sour cream
2 eggs
1 teaspoon baking soda
FROSTING:
1/2 cup butter, softened
3 3/4 cups confectioners' sugar
1/4 cup baking cocoa
1 teaspoon vanilla extract
6 tablespoons milk
1/2 cup chopped walnuts, toasted
DIRECTIONS
In a saucepan, bring butter, water and cocoa to a boil; whisk until smooth. Cool to room temperature. In a mixing bowl, combine flour, sugar and salt. Add cocoa mixture; beat on low speed just until combined. Add sour cream, eggs and baking soda; blend until smooth. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. For frosting, in a mixing bowl, cream butter. Combine the confectioners' sugar and cocoa; gradually add to butter. Beat in the vanilla and enough milk to achieve spreading consistency. Frost the cake. Sprinkle with nuts. Refrigerate until serving.

spiced pineapple pickups
makes about 60
1 can pineapple chunks -------no.21/2 can
3/4 c vinegar
1 1/4 c sugar dash salt
6 to 8 whole cloves
1 4 "-pice stick cinnamon
DAY OR SO AHEAD :drain syrp from pineapple chunks to 3/4 c syrp add vinegar sugar salt cloves cinnamon heat 10 minutes add pineapple chunks bring to a boil refrigerate till time to serve
TO SERVE drain the pineapple chunks serve them ice cold with tooth picks

Something that will taste like home:
Baked chicken with potatoes, onions, yams and carrots. Just chop up veggies, pour on some olive oil, put chicken in the middle - breast down - cover with foil and cook at 350 degrees for 2 hours. Then flip to breast up and melt a little butter on top. Continue cooking at 350 with foil off and cook at 45 minutes.
If you don't have an oven, you can do the same thing in a crock pot. Cook on low for 8 hours.
Easy: Fill a graham cracker crust with chocolate pudding. Top with cool whip and shave a little chocolate on top.
Favorite kid food: cut hot dogs in half, wrap in Pillsbury cresent roll dough and bake in the oven according to package directions.
Super tasty but takes some time: Unroll Pillsbury cresent roll dough out and press into a glass dish. Bake according to directions on package. Let cool and then spread on Philly garden veggie cream cheese. Chop cucumbers, carrots, celery, broccoli, cauliflower, other veggies you like and mix. Cover the cream cheese with this and keep in fridge until ready to serve.
People also go crazy for fruit pizza. Roll out Pillsbury sugar cookies onto a cookie sheet. Bake until brown on top. Mix cream cheese with sugar to taste and spread out on the cooled cookie. Put grapes, blueberries, strawberries, bananas, peaches, etc. on it. (You may need to brush the bananas with lemon juice so they don't brown.) You can also have people make their own - just provide the cookies, the "icing" and fruit.

try these...my mom makes them and they are sooo good
well they are called remakies (sp?)
and what you do is you need two cans of water chestnuts and some bacon and 1/4 cup of sugar and 1/4 cup of soy sause, you take one water chestnut and wrap it 1/2 peice of bacon and then secure it with a toothpick through the middle, once you are done doing that with all of them you mix together the soy sauce and sugar(if you want you can do 1/2 cup of sugar and 1/2 cup of soy sauce) and you let the bacon/chestnut things soak in it for a while, then you lay them on a cookie sheet and broil them until the bacon is cooked
they are sooooo good! definitly try them
