no brown sugar cant make cinnamon roll

You can make a cinnamon filling with white granulated sugar, instead of brown sugar, and cinnamon if you want...spread a little melted butter on you dough and then sprinkle the cinnamon sugar on it.

If you have apples, make a nice apple filling by peeling, coring and dicing the apples. Then add a little sugar and cinnamon or mace or nutmeg.

Or make an apricot filling using dryed apricots. Cut them small and then "stew" them in a little hot water and spread them on the dough.

Or make a nut filling with pecans or walnuts. Grind the nuts and add some butter and a little white sugar.

Or if you have poppy seeds (but it'll take a lot of them), make a poppy seed filling.

fried bread dough is awesome and you can eat it with everything from butter to maple syrup to pizza sauce on it.........we get it at the fair every year.........and sweet roll dough makes the best..........i also like it for pizza crust.........
