A green salad with leftover fried chicken chunks, and add some pitas.

Try varying the bread -- get pitas, and fill with chicken and feta cheese and lettuce. Or french bread, kaiser rolls, soft rolls, tortilla wraps.

Veggie side dishes: mini tomatos, sticks of celery, carrots, zucchini and/or cucumber.

Weiners.

Omelettes.

These last two may seem weird, but they are staples of the Japanese lunch box, and they keep really well. If you are interested in some amazing lunch boxes, look up "bento" on the web. Some are really amazing, yet only take 10 or 15 minutes to put together. Most involve rice, but some involve sandwiches.

Be sure and write up a menu, and shop for ingredients (or let your personal shopper know what you want) for a whole week. That way you won't be fumbling around in the morning, trying to figure out what's for lunch.

BTW, Jello salad is very traditional for picnics. And it will keep even if it's a little warm (although, it's best to do it in a thermos!). Make some up the night before, and pour a little into your wide-mouth Thermos, and pour the rest into a nice bowl for your family to enjoy at supper. Jello salad ingredients can include canned fruit, some fresh fruits, marshmallows, etc. Carrot/lemon jellow is good. So is lime/pineapple/marshmallows.

Have fun!

Hoe about some good tuna salad with a fruit cup and milk or tea. Or Make a salad and keep the dressing separate until you are ready to eat it. I like the South Beach lunch wraps that are by the lunch ables, very tasty and a good variety.

Here are some things I like to make for my husband's lunch

A salad made with cherry tomatoes and cut strips of ham with cheddar cheese. I put it in a tall cottage cheese container and I mix small amounts of dressing in layers in it.

baby carrots

Cold pasta salad mixed with cold chicken strips (chicken made the night before)

Cream cheese in a small plastic container and Ritz crackers (Don't pre make these, because the crackers will get soggy)

Apple with peanut butter

Also - Vegetable crackers, almonds, beef jerkey, grapes, banana chips, sunflower seeds, bottles of orange juice and mandarin oranges
