Have you made Mock Potato Casserole yet? Very good. 1 head cauliflower - steamed until soft. Mash it with 1 T butter and black pepper to taste. Add 4 oz cream cheese, 2 c shredded cheddar cheese, 1 lb crumbled cooked bacon (or veggie bacon if you don't eat pork or don't mix meat and dairy), 2 stalks diced green onions - green and white parts. Mix all together and bake in a casserole dish for 25 to 30 minutes at 350º or until it bubbles. It's best if you make it the day before and refrigerate it overnight for the flavors to meld. If you do that, then increase the cooking time to 40 minutes or until it bubbles.
