it has been explained to me before but i need a-z specifics thanks a bunch!

To make Kahlua pig is a lot of work, I would guess a side of beef would be close to the same.

First dig a hole about 5 feet deep.
Fill the pit with wood and smooth rocks.
Start a fire to make a bunch of coals and hot rocks.
Take the pig and place it on chicken wire that will wrap around the pig.
Get a shovel or big tongs to put hot rocks in the pig cavity.
Enclose in the chicken wire to keep the rocks in.
Cover the coals and rocks with banana and tea leaves, a bunch.
Place the pig on the leaves.
Cover the pig with more banana and tea leaves.
Cover the pig with wet burlap sacks.
Bury the pig so that no smoke or steam escapes.
Dig it up in about 9 hours.

You need to dig a pit...obvousily.
Start a good blazing fire nearby to get the coals for said pit
You want a pine and oak blend for firewood

Once you have good hot coals, you want to line the pit that you dug with a good thick layer of real hot coals.

Meanwhile, have one of minions soak large banana leaves in water and then wrap whatever you are roasting in these banana leaves, be sure to season your roast or you are just wasting your time here. (if you do not have Minion like I do then my your wife or best buddy do it) You can buy frozen Banana leaves any where in the US. just Goggle them

You lay the roast, wrapped tightly in the leaves on top of the hot coals and then cover the top with another thick layer of hot coals completely. Alot of people like to bury the roast but I would not, just the coals will do the trick.

Keep an eye on the coals...don't let them go out...keep replacing them as needed. (keep the Fire Next to burning)

The Bad News...this takes forever to cook

unless you know what you are doing & have done it a lot it will most likely end up costing you a lot of money.
Best to look in the phone book for someone who knows how to do it. I have been to many many of these & they are very time consuming & if not done correctly the meat is wasted...
