Chicken casserole recipe ingredients: Serves 4
8 chicken thighs (skinned)
100g streaky bacon
250g carrots
250g swede
150g button mushrooms
1 clove of garlic
2 leeks
Vegetable oil for frying
450ml chicken stock
2 tbsp plain flour
Salt and pepper to taste

Chicken casserole cooking Instructions:
1. Cut the bacon into small pieces.
2. Peel the; carrots, leeks and swede, then chop them into small pieces squares (about 1in or 3 cm).

3. Wash the mushrooms and dry thoroughly and then cut in half, peel and crush the garlic.

4. Heat the oil in a large frying pan, add the chicken and fry for 5 to 6mins on a medium heat until golden brown. Remove the chicken from the frying pan and put in an oven proof casserole dish.

5. Put the onions and bacon, into the frying-pan, fry for a few minutes until the onions are soft, remove from the heat, sprinkle with the flour add the garlic, swede and carrots also a little of the chicken stock stir and mix making sure the mixture is smooth, return to the heat and add the rest of the chicken stock, bring to the boil stirring occasionally.

6. Pour all the contents from the frying pan into the casserole dish with the chicken, stir well and put into a pre heated 200c/400/Gas mark 6 for 60 minutes until the chicken and vegetables are thoroughly cooked.

Cheese Chicken Casserole -

1 can regular or low fat cream of chicken soup
1/2 cup corn
1/2 cup peas
1/2 - 3/4 cup of shredded cheddar cheese
1/4 cup diced onion
3 Tablespoons of worstershire sauce
1/4 cup of milk OR water
1 cup of cubed cooked white meat chicken

Mix all together in a large bowl and pour into a greased 8x8 pan. Bake at 350* for 50 mins or until bubbly on top and heated through.

You can take flour or corn tortillas or some biscuits and add to the top of the casserole when it still has about 15 mins left to bake and the tortillas or biscuits start to cook and soak up some of the sauce. This is really good.

The following is one of my favorites and you can also add some boiled chicken if you would like....
Broccoli Casserole

1 small package frozen broccoli
1 can cream mushroom soup
1 can cream of celery
1 cup chopped onion
2 cups cooked rice- 2/3 cup uncooked
1 small jar cheez whiz
grated cheese or bread crumbs

Cook broccoli as directed on package. Drain! Cook rice and drain. Mix all ingredients togetherr. Put in a large casserole dish. Top with grated cheese or bread crumbs. Bake at 350* for 30-45 minutes.

Crabmeat Imperial
1 lb. of backfin lump crabmeat, picked over for shells
8 eggs
3/4 C. Hellmann's Mayo
Tabasco 8-10 drops
2 T. dry mustard
1 C. chopped artichoke bottoms
1/3 C. sliced, toasted almonds
1/4 cup or one small jar of chopped pimentos
An 8 C. oblong casserole dish sprayed with PAM

Beat the eggs with the Tabasco, mayo and dry mustard. Stir in pimento and artichoke bottoms. Gently add the crab so as not to break up the lumps to much. Pour into casserole and top with almonds. Bake in a preheated 375 degree oven for 25-30 minutes or until the center is firm.
Serve as a main course, a spread or as a starter.

Green Chili Casserole
Brown 1 lb of hamburger meat (or turkey, pork, ground chicken) Season with salt, pepper, garlic powder.
Add 1 pkg of Chili Seasoning mix.
Stir in 1 can of Cream of mushroom soup & 1/2 can of milk.

In a 13x9 baking dish:
Put about a 1" layer of Tostitos Brand Tortilla Chips
Pour the hamburger mixture over the top of the chips.
Sprinkle with grated cheese.
Crumble about 1/3 of a bag of Tostitos over the top.

Bake at 350 degrees until the cheese is bubbly and starting to brown.

Serve with Ranch Style Beans or Charro Beans.

Mmmmm, so good, quick and EASY!

This is a casserole that i cook often. It is very good!!

! -1/2 lb. of hamburger
salt and pepper to taste
2 large onions finely chopped
1 green pepper, chopped
1 8-oz. pkg. wide noodles, cooked in salted water
1 4-oz can mushrooms and liquid
1 101/2-oz. can tomato soup
1 soup can of water

Brown meat in skillet; add seasoning, onion and green pepper. Fry until meat is slightly browned. Add noodles, mushrooms, tomato soup and water. Mix well; pour into casserole. Bake 1 hour at 375 degrees. 8 to 19 servings.

This is a simple and easy recipe and so very good!! Even children like this.

Everyone loves the Green Bean Casserole so I improvised on it and hubby just loves it as a main course. Here's what I do:

I start with the basic Green Bean Casserole Recipe:

1 (10 3/4 oz) can condensed cream of mushroom soup - undiluted
1/2 c milk
1 tsp soy sauce
dash of pepper
2 cans of julienne cut green beans
1 (3 1/2 oz) French fried onions (I use the larger size)

To this I add:

Sliced almonds (1 small package)
1 small can mushroom pieces and stems - drained (or you can use fresh mushrooms)
Sauteed onions (apx 1/3 medium onion) and 2 garlic cloves - minced
ham cut in cubes (like one of those breakfast ham slices - use 1/2 to 3/4 of it)

I mix together everything except the French fried onions and then add half the can of the French fried onions to the ingredients and mix again to incorporate. I bake 350º 30 minutes and then top with the remaining French fried onions.

You can use frozen or fresh green beans but I like the shape of the julienned. The original recipe said if frozen, then cook up the green beans but if you use frozen julienned green beans, I would just thaw them and use them straight. The 30 minutes in the oven will allow them to cook enough if you like tender-crisp veggies.

I have a Betty Crocker casserole cookbook and it has some awesome casseroles in it. My family's favorite is:
1 cut up chicken (or your choice of chicken parts)
1 cup white rice uncooked
1 can cream of mushroom soup
1 pkg. dry onion soup mix

Cover bottom of casserole dish with the one cup of white rice. Lay chicken on top of rice. Add one can cream of mushroom soup and enough water to cover chicken and mix. Sprinkle with pkg. of onion soup mix.
Preheat oven to 375. Set casserole in oven and cook uncovered about 45 minutes to one hour or until rice is cooked and top is bubbly. Add more water if necessary to keep rice covered.

Sweet Potato Casserole

Ingredients

4 md Sweet potatoes or; yams
1/4 c Packed brown sugar
1/4 c Butter
1/2 ts Salt
1 Can (8 oz) crushed;
1 tb Packed brown sugar
1 tb Butter
1 ts Water
1/2 ts Ground cinnamon
1/4 ts Ground nutmeg
1 1/2 c Miniature marshmallows
1/4 c Chopped pecans

Method

1. Wash sweet potatoes. Prick each 2 or 3 times with fork to allow steam to escape. Arrange in oven at least 1 inch apart. Microwave at HIGH (100%) until fork-tender, 8 to 10 mins. Cover and let stand 5 minutes.
2. Peel and slice potatoes. Place in 2-quart casserole. Add 1/4 cup butter and the salt. Mash until no lumps remain. Mix in pineapple. Microwave at HIGH (100%) 2 minutes. Stir and set aside.
3. Place 1 tablespoon brown sugar, 1 tablespoon butter, the water, cinnamon, and nutmeg in medium bowl. Microwave at HIGH (100%) until butter is melted, 1 to 1 1/2 minutes, stirring after half the time. Add marshmallows; toss to coat. Top sweet potato mixture with marshmallows. Microwave at HIGH (100 % until the marshmallows are melted and potatoes are heated through, 2 to 4 minutes. Sprinkle with pecans.

chicken and rice casserole: take one baked and cooked chicken and cut off both meats on the breast bone. dice and leave in a bowl. make your favorite rice mix like uncle bens wild rice or knotts rice and sauce and add chicken to it but dont cook the rice mixture , make it in a casserole dish and add the chicken and 1 tsp thyme and rosemary and 1 cup of frozen peas. cook in a 325 degree oven for 30 minutes and enjoy it will be good and tender and very flavorful.
