what is the red thing inside green olives called and what is it made of someone told me it was from a fish or something.

It is a pimento also known as a cherry pepper. No fish product. :)

pimento a type of pepper. by the way most aren't really a piece of pepper but a mix of ground pepper and gelatin cut make a perfect little red strip.
