1. That is highly based on opinion. I prefer KDE-based distros, other prefer GNOME, and some even prefer no GUI at all. So first, you must decide what graphical environment that you want. The GUIs all look fairly similar, even in unrelated distros (compare Ubuntu with Fedora).
2. The second issue is the type of performance you need. GNOME and KDE are heavier on resources than FluxBox or JWM. These GUIS are better for low-resource computers.
3. The third issue is how easy you need the distro to be. After you pick the environment you want, I can list some good, easy to use distros based on each environment:
KDE - Kubuntu, MEPIS
GNOME - Ubuntu
XFCE - Xubuntu
JWM - Puppy Linux
FluxBox - Damn Small Linux.
No GUI - ???

Most latest distribution of linux offers KDE and Gnome as standard gui environment for their os.. and ready for desktop customization too..

sure GNOME and the others are GUIs, yet to be particular they are called laptop Environments. Linux is a marginally exciting working gadget: you have the Kernel called "Linux", on actual of this is the GNU gadget and then on actual of all this is the laptop ecosystem.
