For example, is it okay to open up a can of olives, eat a few, and then cover the top with Saran Wrap and stick it in the refrigerator?

I'm glad gosteelers gave you the link...you absolutely should not do that...I can't believe people said it was ok!

According the United States Department of Agriculture's Meat and Poultry Hotline, the materials used in a particular food can are carefully chosen to withstand the processing that food receives in the plant and to protect it from bacteria, spoilage and loss of moisture and flavor. The can materials are really not designed for refrigerator storage.

It is much better to store opened food in refrigerator containers.

I thought this might be a better source, since the link was on improperly canned foods...but still, it's a no!

Of course they are ok. If the can was going to make you sick it would whether it was opened or not. Botulism only grows in the Absence of oxygen, not in opened cans. Almost all cans are made of steel except beverages. Steel is cheaper.
Edit, I guess the food in an un-opened can won't make you sick since you can't get it out.

NO! Storing food in opened or damaged aluminum cans will give you boutulism.
