This is the easiest recipe ever...and very delicious, I might add!
1 cup peanut butter (chunky or creamy...doesn't matter)
1 cup sugar
1 egg
1/2 teaspoon vanilla (optional)
Combine all the ingrediants and drop by the spoonful onto a cookie sheet. I usually get 12 balls about the size of a walnut (still in the shell). Use a fork to press the cookies a little, giving them the criss cross look. Bake at 350 for 8-10 minutes.
You might want to dip the fork in a little water to prevent it from sticking to the dough.
You can add extra peanuts, chocolate chips, etc to the dough. You can also use the flavored peanut butters as well. I made some the other night with chocolate flavored peanut butter and they were awesome! I can usually find the flavored peanut butters at Target grocery stores.

QUICK AND EASY!!!!!!! Peanut Butter Cookies 1/2 cup Peanut Butter 1/2 cup Butter, softened 1 cup packed Light Brown Sugar 1 Egg 2 1/4 cups Self-rising Flour 1 tsp. Vanilla Set oven to 350 degrees. Cut up the butter in a bowl. Add sugar and cream them together until fluffy. Add peanut butter, flour and egg; beat until the dough is smooth. Roll into balls and flatten with fork. Bake for 8-10 minutes, or until desired doneness. Cool on cookie sheet for 2 to 3 minutes then move to wire rack. Cool and store in an airtight container. I have even doubled the recipe for my hubby who loves these!

Peanut Butter Cookies
1/2 c butter
1/2 c brown sugar
1/2 c white sugar
1 ea egg
1 c peanut butter
1 ts salt
1/2 ts soda
1 1/2 c flour
1/2 ts vanilla

2/3 c. shortning (crisco is best)
1/2 c. sugar
1/2 c. brown sugar

1 tbs. vanilla
cream together
add about 1 &1/2 c. crunchy skippy peanut butter (or smooth if you prefer, but cruncy ROCKS the cookies!
in a seperate bowl mix...
1 & 1/2 c. sifted flour
1/2 tsp. baking soda
1/2 tsp. salt
Now add little bits of the flour mixture to the other bowl, mixing it in as you add.
drop by spoonfuls onto cookie sheet (air bake works best). Do the usual fork pressing down thing on the top that gives PB cookies their look.
Bake at 375 degrees for 8 - 10 minutes.
They will be very brittle, but they are the best you'll ever taste! Hint: If you roll the spoonful size amount of dough into a ball first, then do the fork thing, they won't break as ealily.
Now I want one! :)

Peanut Butter Cookies Recipe

2 Wrap dough in plastic and refrigerate at least 3 hours.
3 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
Makes about 2 dozen cookies.
For chewier cookies, bake at 300°F for 15 minutes.
