That depends on so many things.
Is it a traditional late afternoon into night thing? Also, is it a sit down dinner or is it a buffet?
For a Sit down formal dinner, perhaps a creme brule and I would also offer fresh fruit (perhaps with whipped creame and a mint sprig!). For a less formal wedding perhaps an assortment of fresh fruit tarts and ice cream.
For a buffet, I would offer ice cream, fresh fruit and the assorted tarts.
Try tying your deserts into the theme of the wedding, or if the bride and groom are of a certain nationality, of course offer traditional deserts from their cultures.
Congrats!

it might be cool to do something surprising for dessert in addition to your wedding cake (assuming you want a wedding cake). if your wedding cake is a lighter cake such as lemon or vanilla flavored, then you could do a rich, chocolatey dessert like a mousse or warm brownie w/ ice cream. if your wedding cake is a heavier cake (red velvet, chocolate), then maybe try a light dessert such as sorbets or lemon meringue pie. good luck!

Depends on the type of wedding you are having.
At my wedding we had the traditional wedding cake ( chocolate with raspberry filling ) then we also had a ice cream bar that everyone especailly the kids loved.

I used to be a wedding dj and the most popular thing is a chocolate fountain with crackers, cookies, fruits, and everything under the sun to dip it in. People love them, or a cool candy table with little goodie bags so people can pick out all different kinds of candies and take them home.

I love the idea of the make your own sundae bar.
If you are doing a desert table why not add some fun silly things like moon pies and ho ho's?
