My husband is driving around town all day and can't stop for lunch. I usually make him sandwiches or something but he is getting tired of that. I need new ideas. Remember he needs something he can eat while driving. So nothing that requires a fork or a spoon. Please any suggestions?????

How about tortilla rollups or flatbread sandwiches? You can take deli roast beef, mix garlic and herb cream cheese with a dash of horseradish, spread it on the tortilla, top with cheese spread, meat, provolone, dried tomatoes, arugula and roll them up. Any variety of meat and cheese will do. Also, rice cakes topped with hummus make a great meal and can be held in the hand while driving. Meat and cheese rollups along with a cup of soup might also be a nice change. Add a tasty peach, cut in slices and sprinkled with cinnamon and you have a decent meal. Good luck!

How abour a cold civeche wrap. I know most men would not like this on premise. In a bowl mix raw shrimp and scallps with the juice of three limes, about 1/4 c. olive oil, and then any seasoning he likes. Mine has no idea he likes ceviche. I put a tiny amount of finely diced fresh cilantro and 1/2 finely diced jalepeneo with salt and pepper. Let this marinate for a few hours and put on a wrap with avacado, tomato and red onion. If he likes fresh seafood and garden food he will love this.

Another I do for mine is a little more complicated, but I make the soup myself, and you don't have to. It does require a few things, but is so good it's worth it. Toast some italian bread with olive oil, S & P on one side. Then flip the crusty side to the top and top with cheese. Mine really loves italian food so I geneally use parm, but mozz or swiss would be fine. bake this until the cheese is brown and crusty. Give this a thermos full of tomato soup and have him bite with the cheese bread. Again I make my own soup, but it's a piece of cake. Roast about 10 deseeded tomatoes in the oven, at the same time sautee 1/2 an onion. Add the peeled tomatoes to the onions with 1 box of chicken stock and let simmer for about 20 minutes or until reduced by half. Check for seasoning you probably will need to add S & P. When you are ready to serve, make sure the soup is hot and add about 3 tbsp. of cream to each serving. It's so good.

Another thing is empanadas or pasties. Depends on where you descend from. Empenda dough can be bought in most freezer sections of a large grocery store, or you can use pie crust. Fill this with whatever your hubby likes and bake. A traditional empanada has carribean seasoned meat or cheese in it. I like both in mine. Ground beaf, a can of diced tomatoes, an onion, a pepper, seasoned with a little sugar, hot sauce, salt pepper, garlic and onion powder. Simmer this until it's thick like a manwhich consistency. Put in the pastry and bake. You can also add cheese to this. I like mine with just cheese, but I am not a big meat eater. Pasties are a lot bigger. Basically you make a pot of stew and cook it until it's too thick and fill the pastry with it. I have made these a few times and the best way it comes out is to make everything separately and then add them at the end. In a pot I cook 1 finely diced onion and carrot, 2 - 3 colves of garlic, 1 lb. of stewed beef that I have cut into really small pieces seasoned with salt and pepper. Once this is cooked down, about 30 minutes, then I add leftover baked potatoes that I have cubed while cold. I add this to half a whold pie crust (I buy the Pillsbury) and make it like a really large calzone. I can't get 1/4 of this down, but my hubby loves it.

When winter gets here, buy him a thermos, even if it's batman, he should get a kick out of that....or superman
Fill with homemade soup, or chili, or homemade beans with cornbread sticks, chowder

Grilled Mozzarella & Roasted Red Pepper Sandwich
Makes 1 sandwich

Ingredients
1 tablespoon reduced-fat olive oil vinaigrette or prepared reduced-fat Italian salad dressing
2 slices (1 ounce each) Italian-style sandwich bread
Fresh basil leaves (optional)
1/3 cup roasted red peppers, rinsed, drained and patted dry
2 slices (1 ounce each) part-skim mozzarella or reduced-fat Swiss cheese
Nonstick olive oil cooking spray





1. Brush dressing on 1 side of 1 bread slice; top with basil, if desired, peppers, cheese and remaining bread slice. Lightly spray both sides of sandwich with cooking spray.

2. Place large nonstick skillet over medium heat until hot. Add sandwich; cook 4 to 5 minutes per side or until cheese melts and sandwich is golden brown.

Take bread/bun dough. Divide it into bun sized pieces and flatten a bit. Fill with: Cheddar and chopped ham & a dash of garlic or pizza sauce and pepperoni and mozza or onions and cheese.... pretty much any filling! Seal them up into bun shapes. Let rise and bake as usual.

you can try burritos or "wraps". My hubby is a recruiter, on the road all day too, and if he is on one of his healthy kicks, I make him tuna with a pico de gallo (cilantro, onion, tomato, lime, serrano chile) wrapped in romaine lettuce leaves, like a burrito. You can pretty much fill a tortilla with anything, remember to fold up the bottom and wrap it so that he can unwrap it as he eats. you can also wrap rice with chicken (asian style) in a lettuce leaf.
