By the time I get home everyday, I don't want to be in the kitchen for a long time. I want to get in, and out so I can spend time with my son before he goes to bed. I need some quick recipes. We don't eat red meat or pork. But if you do have some recipes that you normally cook with beef, some recipes I may be able to use ground turkey in its place. But I don't want the overdone spaghetti, or lasagna, or meatloaf. Any other ideas? We eat a lot of chicken and some ideas on ways to prepare that would be of great help. Thanks a lot.

You can find some good chicken recipes on www.all-about-meat.com. I'm thinking you'll like the quick chicken stir fry. Their How I Feed My family of Ten for $100 a week special report uses ground meat but you could substitute the ground turkey no problem. I know you said no spaghetti but have you had pasta with a cream cheese white sauce and chicken chunks? It's kind of rich but a plain white sauce would be a healthier alternative. I also saw a squash lassangna that was super easy on pbs. no tomato or meat added.

Summer Citrus Chicken Pasta Salad

it's a good way to sneak in some veggies- your son won't notice with all the sweet oranges and grapes to distract him!

So, i've made this dish so many times that i don't have exact measurments but here goes:

Three to four cups cubed cooked chicken breasts ( cut up meat from a rotissarie chicken to save time)
cooked peas
sliced green grapes
chopped celery ( add carrots for a change)
1 can mandarin oranges
1/2 a box cooled cooked pasta in fun shapes (subsitiute barilla plus penne for heathier option)
miracle whip to taste
salt and pepper

combine all ingrediantes in a large bowl, add enough miracle whip or light mayo to bind everything together and then let it sit in the fridge to cool

serve

I post those recipes about once a week, always simple $ quick, but "real food." Make me a Contact right now, & you'll see the latest, maybe still there, should be! After you get the recipe, you can delete me as a Contact. I wish you'd seen the last one. Moms need to spend time with their kids, not be stuck in the kitchen, I can't agree more.

Brown your chicken tenders and cut up over lettuce, tomato, onion and avocado salad.

Brown l lb. hamburger meat in skillet. Real brown, then add 1 large tablespoon of flour over hamburger & stir, brown the flour and add 2 cups milk. Salt and pepper and stir until your gravy is thick. Toast a piece of bread and pour hamburger and gravy over bread. It is called SOS. Make a small dinner salad. Iced Tea. And you have a quick meal.

baked chx=
slice potatoes and put in baking pan
add boneless chicken/season
pour in one can of peas
squeeze butter on top add s/p
bake for 45 min
