2GB is ideal for all version of Windows Vista. Because 512MB of memory is already consumed by the OS. Now, that's already a lot of memory and multi-tasking sacrificed. With 1GB you're able to have adequate performance but you'll experience lagging once in a while. 2GB will improves things a lot and you won't experience any lag no matter how many applications and programs you open.

I switched to Linux and will never ever ever go back to Windows, so I have never used Vista.
But generally speaking, increasing RAM is among the best things you can do to increase the performance of your computer, regardless of which operating system you use.
But you might be able to get the best of both worlds. You can get the (otherwise preferable) 1GB laptop and then buy another 1GB and upgrade it yourself (order it off the Internet or from any local computer parts shop). This is a simple upgrade you can do at home (although you might have to tear a sticker that voids your warranty). Try to get it so that you have 1GB in one slot leaving one slot free (i.e. 1GBx1), instead of 512MB in each of two slots.

You'll want the 2GB for something like Photoshop. Perhaps you can work out a deal to upgrade the ram on the one you like better.

Depends on you and what you want to run. I have only 512mb RAM and - so far - no problem. However, I have wallpaper and screensaver set to blank, do not do games, music, or video. Graphics consume memory. If you want a slideshow for screensaver, colorful wallpaper, and play multi-games - be prepared to buy megaRAM. If you want a quicker load, review your start menu and clean it up - just be careful not to remove any system files.
Also, regularly, run Scandisk, Disk Cleanup, and defrag. This makes a big difference.

I upgraded firsthand from 1GB to 2GB of RAM and noticed SIGNIFICANT performance increase, startup time etc.
All my media programs (ex: Illustrator CS3, Photoshop CS3, AutuCAD..) run much smoother.
If you have the money, and which for this increase, then I highly recommend it.
