I dont want them to taste bad. Also I would be making alot of them so how should I defrost them? I would like to know from expirence so that I dont come down to the day and have no muffins to serve. Thank you so much.

Your muffins should still taste fresh even if you freeze them for a few weeks. Just be sure to seal them in something like a ziploc freezer bag to keep and refrigerator/freezer smells from being absorbed into the muffins (don't use plastic bag labeled "storage" as they are not as thick and don't always keep out unwanted odors). In addition, if you've got a foodsaver or other vacuum packing machine you can freeze the muffins first then vacuum pack them.

Take the muffins out of the freezer the night or morning before the shower - they usually only take an hour or two to thaw. Cover them loosely with plastic in a cake pan or tupperware as if left in the bag to thaw they can sometimes get some condensation.

They're fine to freeze. Let them cool thoroughly and individually wrap them for best results.
