First of all I am NOT a breeder. I read somewhere that in Golden retrievers, white retrievers and black retrievers(not talking about flat coated) are undesirable. Why is that?

A white coat color is considered defective and is extremely undesirable to responsible breeders because of the many inheritable health issues it carries with it, and because breeding to attain a single trait (i.e. a white coat), compromises the integrity of every other trait. Unfortunately, unscrupulous backyard breeders and puppymillers breed defective, dogs with faults assiduously avoided by responsible breeders so they can scam the puppy-buying public by claiming they have "rare" or "special" colors or coat patterns. The "white" Golden Retriever is an example of this practice.

Because they are bred to be those colors making them a little narcotic. They are basically a mutation of the breed. Golden retrievers are called Golden retrievers because of their color of being golden blond or a golden red. I've met a few White golden retrievers and they are very nervous and crazy lacking the smarts upstairs. Never met a Black Golden Retriever only the Flat coated retriever .

These colors simply don't conform to the breed standard. The breeding program from which goldens were derived over 100 years ago all involved dogs that were various shades of gold. Black or pure white (except for a few hairs on the chest or white from normal aging) is a serious fault. Lots of breeds have color standards. Colors can range from light creamy gold to dark red-gold.

The English, which have a slightly different standard for the breed than AKC seems to prefer lighter goldens but even they do not accept pure white.

It depends if they are English Goldens. English Goldens should be a light cream to white, the lighter the better. Blocky heads and black pigmented around the eyes and nose, the darker the better.
Goldens are one of the more over bred breeds so they are more susceptible to health issues primarily with hips and eyes. This would also affect the coloration, if they do not have Enlgish bloodlines then they should be dark to light golden color.

well, firstly, a "Golden" Retriever should be gold! Kinda just in the standard.

White and black stand out too easily in fields and tules

That only means undesirable to people obsessed with so-called 'purebreeding'. I would think these colours do not conform to the official breed standard - I don't think I've seen a black retriever before actually, so I wouldn't be surprised if this is considered an 'aberration'.
