as in the person who washes dishes and pots in a restaurant
does he/she have a specific name?

The JOB is ''un plongeur/une plongeuse'' or simply ''être plongeur/plongeuse'', you could say both.

And instead of saying, ''faire la plonge'', though it does work, it would be better saying, ''faire DE la plonge'' or even ''être À la plonge'', implying that the dishwahser is some sort of ''work station''.

I'm working in the kitchen tonight and I'm washing the dishes = Je travaille à la cuisine ce soir et je suis à la plonge.

Just thinking of George Orwell - Down and Out in Paris and London. He was a 'plongeur'. He married Sonia Brownwell, who lived in France. She was an extraordinary woman. She spoke French very rapidly and could speak for hours on end in French about the history of Ireland, but would then be suddenly crushed by some idiot who corrected her grammar.
Otherwise of course dishwasher today is just le lave-vaiselle.
Sonia Orwell just raged 'Why can't you THINK? French people THINK.'

Yeah the person washing the dishes in a restaurant is called a plongeur.
