use just a little oil, margerine or butter to coat the pan

use a non stick pan and always cook pancakes on low heat if you dont want to use an oil.(pancake mix usually has a fat in it like oil so this will help on a nonstick pan)
i prefer to use butter even tho it has a medium smoke point (burns at a lower temperature than oil) it has better flavour. margerine will make your pancakes tast funny. i never use the stuff.
but the most important thing is what i have already said and that's cook at a low temp. medium (setting 5-6) is best for all cooking. it takes longer but it's the proper way to do it....
good luck!

Oil is best as butter burns too easily. Try dropping a few drops into your batter too - makes them lighter and crispier!

Make sure you heat the oil in the pan well (olive oil best) it should be almost smoking!

You can use cooking spray (like Pam) to limit the amount of oil but you do need at least that much.
