Select the column or columns whose width you want to change. Go to Format Menu - column - width- specify the width that you want.

You can't adjust the width of just one cell and not the entire column.
You can however merge two or more cells to make one cell wider than the others in the column. However that cell will just take on the width of those columns combined.
If each individual cell with could be changed individually, you could potentially have a horrible mess. Depending on how the widths were set up. You could possibly have a Column D cell for instance being displayed under a Column M header and every other cell in that row or those rows would be a horrible mess. That's why Microsoft doesn't allow it. It could create total confusion when working with a spreadsheet.

Click and hold on the little black box in the lower right of the cell. Drag to the width you want.
From the Home tab select the Merge & Center's Down Arrow. Select Merge Cells. Start typing , if you do anything else but type the cells revert to a single cell.

Cells within a single column share the same width setting. However, if you are trying to resize a single column: select the column by left-clicking its column label (ie 'A'), then position and double-left-click the mouse pointer over the dividing line between the selected column label and the adjacent column when the mouse pointer changes to a horizontal resize cursor.

Left Click on the letter designation at the top of the cell, right clicking with then bring up a menu including "cell width."
If you never save the document your changes won't take affect, so don't have too much apprehension to changing the width.

Not sure your exact end result, but you can use the "Merge" option. That way you can take a single cell and merge it to one next to it. This does eliminate the use of the other cell(s) though. Hope that helps/
