The average fresh whole cows milk is 3.5% butterfat.
By using a centrifuge type device, the fat can be removed and used for other purposes, like whipping cream and butter.
Depending on how much fat is removed, the remaining milk can have 2%, 1%, 1/2% or 0% fat and is sold under those labels, 0% being Skim Milk.
When milk was used to make butter, the remaining liquid had a tangy thicked flavor and was called Buttermilk. Today, most buttermilk is made by treatment rather than being a result of making butter and is sold for drinking and baking.

All milk has fat in it as it comes from the cow. (Or else where could we get cream or butter from?) Skim - or non-fat - milk has all the fat removed from it. Then there is 1/2% milk(which has 99-1/2% of the fat removed), 1%milk(which has 99% of the fat removed), or 2% milk (which has 98% of the fat removed). Most doctors recommend that children over 2 and adults use either skim, 1/2%, or 1% milk. There are some nutritionists who advocate that pre-teens and teens should use 2% milk to provide their bodies with that "extra boost of energy" that they seem to need and require for growth.

There is fat in milk because that is the way the cow makes it! People wanting to decrease their fat intake (for weight loss or lowering cholesterol) will want to choose 2%, 1%, or skim milk (which I prefer). There are different kinds of milk because there are different kinds of customers, plain and simple. If a person is lactose intolerant, they drink soy milk. Like chocolate milk, producers make it for you. So many different types are the result of the wants of the consumer.

all milk starts out as whole milk. it's processed to remove some or all of the fat depending on what's required. anything produced by an animal will have some fat in it.

milk is suppoused to be for ones offspring and it has fat content to promote growth in ones young. there are different kinds of milk because there are different amounts of fat and other stuff in it..

depends on the cow, the dairy and its processing, the grass it eats, the country its in, the water it drinks, etc....
