Hi :o) We are about to go into a new school year with my 2 nieces. I am also going back to school and my boyfriend is working. I am looking for meals I can cook in large batches and freeze (for later dinners). I want to be able to eat healthy and have the convience. PS I dont mind cooking all day saturday and sunday to have healthy meals through the weekdays. Can anyone offer me meal ideas?? Like cabbage rolls......(my 2 nieces live with me - we are a family of 4) Thanks in advance!

Make healthy soups and stews.Freeze them in containers large enough for four.
Lasagna,chili,roast beef,ribs,pork chops,chicken all freeze well.So do cabbage rolls.
The ideas are endless so let your imagination fly.
When I worked,I set aside every Sunday for ccoking for that week.I froze everything in containers big enough for my family.
Another good idea is to use a crockpot.Prepare in the morning,turn it on and voila,supper is cooked when you get home.Lots of great crockpot recipes out there on the net.

Stuffed Cabbage

2 small heads of green cabbage...If you get them too big the rolls split...

1 16. oz. can tomato sauce/juice or even spagetti sauce will work I also like to add chopped tomato canned is fine or fresh

1 egg
1 lb. meatloaf mix meat (pork, veal, beef) combined for best flavor.
1 lb. of smoked kielbasa or polish sausage.. (Hillshire Farms is fine) Cut into chunks
1 cup of rice
1 small onion diced/1/2 green peper diced
2 cloves of garlic
1 can of sauerkraut
tsp each salt/pepper
1 tablespoon italian seasoning if you have it....


Cut the core out of the cabbage/ but don't cut through This will help the leaves seperate
Start by covering the cabbage with water in a large stock pot.. Use enough water to just cover.. Add some salt 1 tablespoon. Blanch cabbage for about 2 min or until tender.. DO NOT THROW OUT WATER it's the cooking liquid or the little bits of cabbage.

Mix the meat, onion, uncooked rice, gr. pepper and garlic and egg.. DO NOT OVERMIX.. it's like a meatloaf, just wrapped in cabbage...

After the leaves have blanched.. Plunge into ice water to stop the cooking... Cabbage should be firm/yet pliable.. Trim the cabbage leaves by cutting out the tough stem ends, but leave the leaf(s) whole...

Put a couple tablespoons full of the meatloaf filling and roll the cabbages... Insert fingers into the ends to "seal" the rolls to keep them shut ! Use any discarded leaves on the bottom of the pot so the rolls do not scorch...Place back in stock pot w/ the water you used for blanching..
Layer cabbage rolls and add a layer of sauerkraut, then some cut up sausage.. Repeat layer of cabbage rolls, sauerkraut and sausage until you've used up all the cabbage rolls... Dump in the tomato sauce/juice and water from the saurkraut... Simmer on low for acouple hours... You can even do this in a crock pot...

Serve over mashed potatoes... Use "broth" as gravy.....

You can freeze just the cabbage rolls and make the "broth" seperate when you are ready to eat... Just freeze rolls uncooked on a cookie sheet overnight and place in plastic baggie... Make "broth" using sauerkraut/sausage/tomato juice/ or spagetti sauce and cook as usual...

well cook a little bit during the week days but if you want to eat healthy all u have to do is cook one type of meat, some vegetables, and what ever else. you dont always have to cook very big. Like you said weekends are different you have time but week days you are on a time limit.

you can make chili in advance and freeze it. i don't know exactly how to make it but i know to make it healthy/vegetarian add Boca's veggie crumblers. they are soy but taste just like meat. when you are ready to eat it, just put in a pot and heat.
