God spoke those words while Adam was in Eden and before sin entered the world. Thorns and brambles came after sin.
Also some of the poisonous plants are having medicinal properties. There is a tree, the seed of which is used in treating blood cancer, but if we go near the tree it will cause skin rashes.
Everything God made has a purpose.

As I cannot even pretend to know God's mind, but all those plants that are poisonous taste bad. Also we should consider all the evil things we have done to our mother earth. We may have without knowing, created these ourselves. That's the best I can come up with. Did that quote come from the Old or New Testament? The Old Testament no longer applies as all the prophecies were fulfilled with the birth of Jesus.

Once man sinned, a whole new plan emerged.
Since man ate of the tree of the knowledge of good and evil, his was now the victim of God's curse.
The following passage is taken from Genesis chapter 3 (the verses are numbered).
17 Then to Adam He said, “Because you have heeded the voice of your wife, and have eaten from the tree of which I commanded you, saying, ‘You shall not eat of it’:
“ Cursed is the ground for your sake;
In toil you shall eat of it
All the days of your life.
18 Both thorns and thistles it shall bring forth for you,
And you shall eat the herb of the field.
19 In the sweat of your face you shall eat bread
Till you return to the ground,
For out of it you were taken;
For dust you are,
And to dust you shall return.
If man didn't disobey God, then there would be no poisonous plants.

You're forgetting the one plant that God told them NOT to eat...the tree of knowledge of good and evil...God told them that they would die if they ate it. Perhaps the poisonous plants today are all descendents of that plant...or perhaps disobedience (sin) led to the mutation of some plants into piosonous forms.
The verse you cited talks about God's original plan for humans in the garden of eden...it is clear that the plan changed after Adam and Eve left the garden...I have no idea what the extent of those changes were, but the creation or evolution of poisonous plants it certainly one possibility.

We all speak in generalities all of the time. I'm sure the author of Genesis did the same thing. The question should be "Should we take everything in the Bible literally"?
But to be a devil's advocate for those who say God is referring to the plants BEFORE the fall, what about what God said to Noah after the Flood?
"Everything that lives and moves will be food for you. Just as I gave you the green plants, I now give you everything" (Gen. 9:3).

If God said behold to Adam & Eve ,he must have done this before.He started right away with the rules,but it supposedly took thousands of years for him to come up with the 10 commandments.Please pass the swiss cheese there are fewer holes.

herb bearing seed- fruits and vegetables- that doesn't mean to go out and eat anything that is growing wild.besides that was in the garden of eden, not the here and now.

Mushroom is a fruit of a plant, it bears seed (spores).
Many can kill you, prepared or not.
Yew trees are deadly too.
