i was peeling the yolk away from the white and the bottom of the yolk is green. is this safe to eat??

Yes, they are safe to eat. The green is a sulfur ring that results from being overcooked.

They will taste just fine, they just won't be as pretty.

If you want perfect hard-boiled eggs next time, fill the bottom of the pan with eggs and cover with COLD water. Bring this to a boil for 10 minutes, then turn off the heat and let them sit in the hot water for an additional 10 minutes. Then pull the eggs out into an ice water bath to stop the cooking process. This will give you a nice yellow, perfectly set yolk.

Also: there is another method for making hardboiled eggs on this site. I have tried bringing my eggs just to a boil, turning it off, covering them and letting them sit for 10-15 minutes and they have turned out fine. So there are many ways to get around the green yolk problem- just avoid overcooking!

They're perfectly safe and won't taste any different. It's a reaction from over boiling them. Next time, put them in tap water, and bring it to a boil. Boil for 10 minutes, then shock the eggs with cold water (or ice and water) until they're cooled. The yolks remain yellow every time.

You have been given several opinions on why they turn greenish at times. I'm not sure which person is correct. If the eggs were bad, they would smell bad. I've often had parts of the yolk turn green and never did figure out why, but they were all fine. They tasted fine, smelled fine, didn't make us sick.

They should be safe to eat if they smell fine.

Put your eggs in small pan and cover with COLD water. Bring eggs to boil and IMMEDIATELY turn down to simmer---put lid on pan and SLOWLY simmer for 15 min. When eggs are cooked, run under cold water and then remove shells.

To keep eggs from cracking, put small amount of vinegar in water.

Also might try Egglands Best eggs for deviled eggs or when eggs should look pretty. They cost more, but worth it. Use less expensive eggs for recipes.

Yes it has something to do with your cooking pot. i know this sounds weird but i had this happen and it turns out something in the cooking pot combined with the water boiling did this too the egg, dont worry just mix and make it like u always do and u will see they are just fine...

Is it a grayish green? Then it should be ok. If it is a vivid green I would toss them!

lol, they turn green, you did it PREFECT. A lot of people can't do that. Eat to your hearts content they are safe.
