one red cabbage
one Lt malt vinegar
half a pt pickling spice
some extra chillie
slice the cabbage and poar into clean screw top jars
bring the vinegar and spices to the boil simmer for 10 Min's
let cool and pour over cabbage steal and leave for a couple of weeks eat and enjoy

if you cook the cabbage in regular vinegar or any liquid it would turn red.because of the color of the cabbage
Red Cabbage Sauerkraut:
1/4 cup olive oil
2 cups red wine vinegar
1 cup water
1/4 cup granulated sugar
1 teaspoon whole mustard seeds
2 cloves garlic, peeled and thinly sliced
1 large head red cabbage, thinly shredded
Salt and freshly ground pepper
Preheat grill to high. In a medium saucepan, combine the oil, vinegar, water, and sugar over medium heat, and cook until the sugar has melted. Add the mustard seeds, garlic, and cabbage, and cook until the cabbage is soft, about 15 to 20 minutes. Season with salt and pepper, to taste.
PICKLED RED CABBAGE
1 lb. shredded red cabbage
1 tbsp. salt
2 1/2 c. white wine vinegar
1 tbsp. soft brown sugar
1 tbsp. pickling spice
Peel the cabbage in a large bowl and sprinkle each layer with salt. Leave for 24 hours. Drain off any liquid and rinse off any surplus salt. Put the vinegar, sugar and pickling spices into a pan, and bring to the boil. Simmer for 5 minutes and allow to cool for at least 2 hours. Strain. Pack the cabbage loosely into jars and cover with the spiced vinegar. Cover label and store in a cool place. Can begin to eat after 1 week. Will begin to loose its crispness within 2 to 3 months.
Pickled Red Cabbage
Nice, spicy recipe for an old favorite
Ingredients:
1 red cabbage, shredded
2oz. (50g) salt
4 pints (two and a half litres) white vinegar
1 tablespoon of cloves
1 tablespoon of allspice berries
2 inches (5cm) cinnamon stick
6 peppercorns
quarter teaspoon (1.25ml) grated nutmeg
Cooking Instructions:
Arrange cabbage in layers in a wide bowl sprinkling each layer generously with the salt
Cover and set aside overnight
Drain, then rinse in cold, running water
Place the rest of the ingredients in a heatproof bowl
Put the bowl in a pan half-filled with hot water
Bring to the boil, then remove the pan from the heat
Set aside and allow the vinegar and spices to steep for 2 hours
Pack the cabbage in hot, sterilized jars
Strain over the vinegar to half an inch (1.25cm) of the top
Seal and label

The cabbage you start with is really red, very red. There is no secret.
1/4 cup (1/2 stick) butter
1 2-pound red cabbage, thinly sliced (about 12 cups)
6 Tbsp sugar
2/3 cup balsamic vinegar
Melt the butter in a large pot over medium heat. Add cabbage and sauté until slightly wilted, about 5 minutes. Add sugar, toss to coat evenly. Add vinegar. Reduce heat to medium-low; simmer until cabbage is tender, stirring often, about 30 minutes. Season to taste with salt and pepper.
Serves 6-8.

i think the answer up there is much more of a recipe of kimchi.. im not really sure but i think red cabbage is more of a type of a cabbage.. not something that u could make or cook.. well you could plant it.. im not sure if chinese cabbage and red cabbage is the same..
oh.. just read the details.. stupid me.. isnt it chili powder tho??
