Once they are done being grilled, can I then freeze them? And, will they thaw with good texture and taste?

yes you can
I do it all the time for my lunch
I usually freeze in individual plastic bags after grilling it so I only defrost exactly what I need for lunch
I take it out of the freezer while cooking dinner,place it on my counter,when all done with cleaning up after dinner, its pretty well defrosted
then I put it in the fridge for morning

I'm a cook the best way to do this is to microwave it. You have to figure out how to do this so that all of the juice/water is gone in tn the microwave bowl before you remove the peace of meat. Very simple. Can microwave things many times:)

If they were fresh to start with, and not out of the freezer, then yes. Use them fairly soon though.

when you re-cook them put them in a skillet with a little bit of water and warm them up slowly with the lid over the skillet but from my experience it tasted fine.

They will taste like something is wrong....do no re-freeze. Just buy new chicken or buy less so you don't have to save it.
