Example, my father accidently sent a Christmas card to one of my ex's parents who were Jewish.

No, but I accidentally once wished two Jehovah's Witnesses a Merry Christmas after they tried to witness to me at my apartment. It wasn't intentional, but I'm sure they thought it was.

I've never sent a Christmas card that had a religious theme to any of my Jewish friends, however, I do send them Christmas cards--with Christmas scenes (not the nativity or with churches on it) -- snowmen, or beautiful Winter scenes wishing them peace and love, etc. during the holiday season.
I've also received the same type of Christmas cards from my Jewish friends.

So, I don't think of it as a mistake unless it was a nativity scene. But, I wouldn't be too concerned. I'm sure your ex's
parents were not offended.

No, but I've done it on purpose. I'm a Christian, and have a Pagan friend. For years, we've sent each other holiday cards from different faiths and traditions. She sent me a Kwanzaa card; I sent her a Hanukkah card. Yes, I've sent her a Christmas card, too, and she's sent me one. After we started running out of cards for all the major winter holidays, we decided to branch out to other holidays and events (the more inappropriate, the better), so last holiday season, I sent her a Bar Mitzvah card, and she sent one wishing me a happy Fourth of July.

People send me christmas cards every year and they know my beliefs. Why would I mind? A card never hurt anyone and you really don't see the "jesus died for you and you better believe or you will burn in hell" christmas cards. Cheery notes to have a good season and at the most a "blessed" christmas...what's the big deal?

Americans who are Jewish are used to it and the far majority are not at all offended. My wife and I receive thousands of Christian cards, which we give to a charitable organization in California that 'recycles' them for the next year, but we do not send any. Instead, after Christmas we send "Peace" cards, and to our friends, private individual and handwritten letters.

I intentionally send the wrong religious post card to people I know. If you're christian, your getting a Happy Hanukah card, if you're jewish, then it's a Merry Christmas. If I don't know what you are then it's Saint Patrick’s Day.
