Carmine is a common Italian name. Carman is not Italian at all.
About Carmen and the opera named after it: is a female character and Italians usually don't give boys girlish names...
And most of all Carmen is spanish.
When my grand-grand father passed through the immigrations in the early 20th century the clerck at the desk miswrote his name on the papers (my ggf couldn't read or write) and so it was altered on all the papers, maybe it happend the same to you ancestors?

Yes, it is very Italian. You even get an opera named after you. People who are claiming Carmine over Carmen are forgetting regional variations.

Carmen is a very common name in Italy today, as well as a hundred years ago, I would say it is very safe to say , your grandfather was Italian.

No, the name Carman isn't Italian at all, I googled your name and I discovered an American singer of southern Italian origin, whose real name was Carmelo, a typical name from southern Italy. Most likely your grandfather's original name was Carmelo and americanized in Carman.
