Looking for a good salad recipe that has chicken but not cheese.

Simple Southwestern Chicken Salad

INGREDIENTS
2 boneless chicken breast halves, cooked and cubed
3/4 cup mayonnaise
1/4 cup chopped celery
chopped fresh cilantro to taste
1 (1 ounce) package taco seasoning mix
DIRECTIONS
In a medium bowl, combine the chicken, mayonnaise, celery, cilantro and seasoning mix. Mix well.
Cover bowl and refrigerate for 1 hour.
Serve on lettuce.

I make chicken salad all the time without cheese.
Use a dark leafy green lettuce (more nutrients). You can buy already made breaded chicken which you can throw in the oven or you can bread your own. Slice the cooked chicken and put on top.
You can put anything else in your salad that you like...tomatoes, cucumbers, peppers, etc.
Then I make a lowfat yogurt dressing by mixing yogurt with a bit of vinegar. You can add herbs to it as well, whatever you prefer. I like chives and parsley myself. Just pour a little over the salad and it is done.
Sunflower oil and sunflower seeds are yummy on top too!

You can buy chicken cooked, sliced, and ready to eat just for that purpose. Costco carries it, and you can get it frozen too.

Salad greens come in all kinds of mixes these days, washed and ready to eat so there are no excuses! Just throw in some croutons with a nice Spring Mix, some chicken and toss with your favourite dressing. I prefer a home made olive oil/balsamic vinegar mix. I make it in advance chop garlic and parsley and add some salt, put it in a baby jar and shake it up every now and again. Make it a good hour or so in advance, strain through a sieve over your salad and toss. Throw in any other veggies you prefer like cucumber slices, grated carrots or sliced red onions.

I just like to make a nice combination salad with lettuce, cucumber, celery, green pepper, green onion, radishes and whatever other fresh salad ingredients I have. Then slice a hard boiled egg on it and add croutons. Then put sliced chicken on the top and add dressing of your choice.

Here is what I would do:
-Bag of spinach, baby spinach (found near the lettuce bags)
-Grilled chicken breasts
-Nuts - I like walnuts, but you could use pecans - use about a half of a cup - cook them to coat them in a saucepan wiht 1/4 cup each of brown sugar and water. Set them on a plate to dry.
-Red onions - remember to leave them bigger so that people that dont like them can take them out.
-Fruit - people love fruit in their salad now-a-days - use sliced strawberries or even apples - whatever it is you like - you could even use figs (not a fav of mine but I hear they taste good to most people)

-Essemble the salad

Dressing:
-One grapefruit
-Pepper
-Salt
-Olive oil

Juice the grapefruit - doesnt matter if some of the flesh - aka the meat of the fruit - gets in it - just no pits - to one whole grapefruit juice, add about 2 teaspoons of pepper and 2 teaspoons of kosher/sea salt. Mix - I like it just like this - but for those use to the vinigrette, use some olive oil. This can store in a seperate tupperwear contanier - this way you can have access to it more then once - It keeps for about 1-2 weeks. Remember - if you like more/less salt/pepper/oil - do it to your taste.

Take the dressing; coat the salad; serve - unless you were serving to a lactose intollerant person or someone who apparently lost their mind and doesnt like cheese - serve some crumbled blue cheese on the side.

You can take out the chicken and make it a side salad or easily exchange it for beef or shrimp.

you can make any salad without cheese, but it does add to it.

Try baby spinach, grilled onions and red peppers, some minced garlic made in olive oil, try some crumbled bacon (turkey if you wish) I'd still say some gorgonzola or smoked gouda, but leave it out and just add tomato wedges and maybe and few sliced hard boiled eggs. Mix some olive oil and balsamic vinegar for a light dressing.....(pine nuts if you like 2) a few craisins if you are daring. LOL....good luck

BBQ Chicken Salad


4 boneless, skinless chicken breasts, cooked and shredded
6 stalks celery, chopped
1 red bell pepper, chopped
1 small red onion, chopped
1 (14 ounce) can corn, drained
½ cup barbeque sauce
¼ cup mayonnaise

Combine chicken, celery, bell pepper, onion, and corn in a large bowl. In a small bowl, combine barbeque sauce and mayonnaise. Pour over chicken and toss gently to coat. Chill. Serve on lettuce-lined plates.


Oriental Papaya Chicken Salad


1 pound boneless, skinless chicken breasts, cooked and shredded
¼ cup white vinegar
1 tablespoon Chinese red chili paste
2 cloves garlic, minced
2 teaspoons sugar
1 papaya, peeled, seeded and grated
2 carrots, grated
½ cup fresh cilantro
Salt and pepper to taste

Combine vinegar, chili paste, garlic and sugar in a small bowl. Set aside. In a large bowl, combine chicken, papaya, carrots, and cilantro. Pour the dressing over and toss gently to coat. Season with the salt and pepper. Spoon onto lettuce-lined plates and serve.

MELON SALAD
INGREDIENTS:
1/3 cup honey
1 tablespoon sugar
1/2 cup orange juice
3 Tbsp. lemon juice
2 Tbsp. chopped fresh mint leaves
4 cups cantaloupe balls
2 cups honeydew melon balls
2 cups watermelon balls
PREPARATION:
In a small microwave-safe bowl, combine honey with sugar. Microwave on high power for 30 seconds; remove and stir. Microwave 30 seconds longer until sugar dissolves.

Stir and let stand for 10 minutes.

Add orange juice, lemon juice, and mint leaves and mix well.
Place melon balls in large serving bowl and pour honey mixture over. Toss gently to coat and serve immediately or cover and refrigerate until serving time. Serves 12

2 cups cooked cut-up chicken
1 cup chopped celery
1 tablespoon lemon juice
salt and pepper to taste
1/2 cup mayonnaise, or as desired
2 hard-cooked eggs, chopped

PREPARATION:
Toss first 5 ingredients together, adding enough mayonnaise to moisten to desired consistency. Fold in chopped eggs. Serve on lettuce leaves and garnish as desired.

Serves 6.
