Christians who were in power. They needed people to believe, but the vast majority found in hard to have faith in a God who could not be seen. So Jesus was made the son of God, the drinking of wine became acceptable, and many other non-Christian beliefs were put into the Bible to make converting non-believers easier, as they did not have to change their lifestyle much. If you do some research you'll see for yourself the amount of pagan beliefs in the Bible. Also, as Scientific theories came about to explain the creation of the universe, biblical theories were again revised and deemed compatible with the Big Bang.

The Bible as we know it was constructed from numerous ancient documents in about 300 AD. The council of Nicaeadecided what documents should be included in the Bible and what should not. Apparently Jesus described the nature and form of the human soul, but this was deemed to radical to be included and was left out. Mary Madeline wrote a Gospel that was also excluded. The early church needed to decide what was Jesus' message and what documents would support the message. They seemed to have chosen a fairly conventional message that would put them in a position of power and allow them to dominate the public as well as a story that would fit in with more ancient beliefs. I believe that Jesus had a lot more to say about the spiritual nature of the human being and our relationship with God, but this was to radical and not included. I think he was called the son of God because it fitted in with more ancient beliefs and that there would have been ancient texts where he denied being the son of God, but these would not have been included in the Bible. There's a lot more to the story of what happened 2000 years than the public are told, but I think the Catholic church knows this and may even have copies of some of the ancient documents that were not included in the Bible.

Though the Papacy made changes, the greater amount of changes, deletions, and replacements was done by Protestants and the Monarchies of France and England. As the Christian church splintered in the "New World" wholesale changes were made to fit the needs to the sect leaders.
