i'm looking for dessert ideas for new years evei know its a little early but, it has to have a musical theme and i'm so lost i don't know what to do, i have to make enought for 350 people, and i'm lost anyone have any good ideas?

I saw several musical cookie cutters there--about $11 each. If you get maybe 3 of them, you could make some great cookies!

Otherwise, try googling cake pans for musical ones.

Good for you for starting now! But, I'm a little perplexed that you'd be asked to create desserts for 350 people all by yourself. And, if you are an experienced caterer, I'm sure you already have ideas in mind. Nevertheless, here are some ideas:

1. Cheesecake bites
2. Mini turtle brownies
3. Mini canoli's
4. A variety of gourmet cookies
5. Tiramisu
6. Dessert "shots" of layered parfaits
7. Jello "shots" made with sparkling water and topped with whipped cream.
8. A chocolate fountain with fresh fruit and cubes of pound cake.
9. A white chocolate fountain with the above
10. Puff pastry bites filled with lemon curd
11. Baklava
12. Mini chocolate mousse's (or is that Mice??? LOL"
13. Creme brulee bites

The list goes on. In terms of keeping it in touch with your musical theme, keep the food simple and elegant. Incorporate your theme into food titles or decorations. You will need 4 - 6 desserts per person. Make sure that you have enough time to prepare or purchase your desserts and know what your budget looks like. Find a good freezer so that you can make things ahead (like the cookies) and freeze them. And, get some help!

350 people sounds like catering to me. You have to do different things, not just one type of dessert.... with the kind of theme you have chosen. You can have a variety of jello-s, flans, cakes... all with your musical theme drawn on them.

Hello,
Check these websites bettycrocker.com, recipesource.com, allrecipes.com. The other thing you might consider is to have a potluck. Ask everyone to bring their favorite dessert. That way there's variety and a conversation starter.

this isnt really "musical"... but theyre good lol get a box of cinnamon graham crackers.. whipped cream and a lot of strawberries... but the whipped cream on the cracker and put like 2-3 strawberries on the whipped cream.... the recipe is actually on the back of the graham cracker box haha... IDC theyre good lol and really easy to make for 350 people but youd need a hell of a lot of those 3 things lol

Meringue Shells with Macerated Strawberries, Whipped Cream and Hazelnut Chocolate Sauce

3 cups fresh strawberries, hulled and quartered
1/4 cup Grand Marnier
1 1/4 cups sugar
2 teaspoons grated orange zest
1 teaspoon unsalted butter
3 large egg whites
1/2 teaspoon cream of tartar
1 1/2 cups heavy cream
Hazelnut Chocolate Sauce, recipe follows

In a bowl combine the strawberries, 2 tablespoons of the Grand Marnier, 1/4 cup of the sugar, and the orange zest. Let macerate for at least 2 hours, and up to 8 hours, tightly covered, and refrigerated.
Preheat the oven to 200 degrees F. Line a large baking sheet with foil and grease lightly with butter.

In a mixing bowl, beat 3 egg whites and 1/4 teaspoon cream of tartar with a mixer until soft peaks form. Gradually add 3/4 cup of the sugar and beat until the meringue forms stiff, shiny peaks. Spoon the meringue into 6 equal mounds on the greased sheet, and using the back of a spoon, spread slightly out and make an indentation in the center.

Bake on the middle rack of the oven for 1 hour. Turn the oven off and leave in the oven until dry, about 1 hour. Remove from the oven and transfer to a rack to cool completely.

In a mixing bowl, beat the heavy cream until soft peaks begin to form. Add the remaining 1/4 cup of the sugar and the remaining 2 tablespoons of the Grand Marnier, and beat just until stiff peaks begin to form.

Place 1 meringue on each of 6 plates, and fill with 1/2 cup of the macerated strawberries. Top with a dollop of whipped cream, and drizzle warm chocolate sauce over the top. Serve immediately.

Hazelnut Chocolate Sauce:
1 cup whipping cream
2 tablespoons orange liqueur
8 ounces bittersweet or semisweet chocolate, finely chopped
1/3 cup toasted, chopped hazelnuts

In a medium saucepan, bring the cream and orange liqueur to a gentle boil. Remove from the heat, add the chocolate, and whisk until melted and well blended. Whisk in the hazelnuts and cover to keep warm until needed.
Yield: About 1 1/2 cups


Little Sweet Tarts with Mascarpone, Raspberries, and Chocolate

The shells can be frozen for up to a month. Bake, cool, and fill up to several hours ahead on the day they are needed. Vary the fruits with the seasons.

Makes 4 to 6 tarts
1 sheet commercially prepared puff pastry, thawed in the refrigerator
Four to six 3 1/3 x 3/4-inch tart shells with removable bottoms
1 cup mascarpone cheese at room temperature
2 tablespoons confectioners' sugar
2 pints raspberries
4 tablespoons apple jelly, melted
1 small (4 ounce) bar good semisweet chocolate, shaved into curls with a vegetable peeler
Mint leaves for garnish

Preheat the oven to 425 °F

Prepare the puff pastry and line the tart shells as described for Little Cheese Tarts (use “Quick Search” function on “Recipe Box” on website).

Prick each tart shell several times with a fork to prevent them from puffing up in the oven when baked, or place a small sheet of aluminum foil over each tart and spread uncooked rice or dried beans over the top to prevent puffing.

Place the shells on a baking sheet.

Bake for 8 minutes or until nicely browned. Remove the tart shells to a cooling rack. If you used the foil-and-rice method, remove and discard them. Allow the tart shells to cool completely.

In a medium-size bowl beat the cheese with the confectioners' sugar; divide and spread it among the tart shells. Arrange the raspberries on top of the mascarpone to completely cover the top.

Brush the raspberries with the melted apple jelly and scatter some of the chocolate curls over the top. Add a mint leaf.

Refrigerate until ready to serve.
