My dad makes french fries and he keeps the oil for MONTHS. he says since it get's to 400 degrees it kills all the germs and it's ok, but I'm wondering if he's right because he tends to be a bit of an idiot sometimes, any imput?

Bacteria is not the issue. You can reuse oil many times as long as you filter out the little bits left behind each time. Discard oil when it begins to foam or smoke at low temperature. Old oil will only make your food taste bad, also makes a mess when it foams over, but generally will not hurt you.

It depends on how often it's used. Discard it when it gets dark, has sediment, and smells and smoke. Fish is the one that usually gets to it the worst. The oil tastes funky and and the breading does too. Then it's time to change.

Oil doesn't spoil in any way. You can use it and store it as many times as you want. So your dad is right. Be nice and don't call him an idiot. Have a nice evening!

awhhh how painfull
I dump mine when the sediments get out of hand
and as long as there is no smell.
the resturants dump like weekly but think of the volume
and they just pass the cost on to you and I
