You need to work out your itinerary - how many nights will you stay each place? You need to budget for travel and gifts as well.
You mentioned hostels, so I guess you all won't be staying in five star hotels and going fine-dining.
I would *over*estimate the amount, budget and you won't overspend. How about 175 usd per person per day?

Figure about $30 a night for a hostel in a big city, $20 a night for a hostel in a rural area. You can eat on $20 a day if you eat one meal out, breakfast in the hostel and dinner either street food or go to a grocery. Add to that a minimum of $50 or so for transport, admissions and misc. costs.
If you travel to a lot of places, or like to go to a lot of attractions with entrance fees, then adjust up a bit.
So probably 100 to 150 per person per day.

You should bring between 200 and 300 in local currency if you think you're going to have to pay cash for hostels. Your safest bet is to bring either a credit card or bank debit card. This way, if the card is stolen, it can be replaced and you won't be responsible for any charges made after the theft.
If you can't get these, what you can do is get a prepaid visa. You put a certain amount of money on a Visa, Mastercard or American Express card and it works kind of like a gift certificate. It's accepted everywhere that takes those credit cards and can be replaced if stolen.
If you have one of these cards, you'll probably only need 100 or so in local currency for small purchases and emergencies. And remember, exchange your money back to US dollars before you leave the country you're visiting. You'll get more back that way.
Invest in a money belt or some other way to keep your money and passport close to your body and out of reach of pickpockets. Some countries are infamous for high rates of theft in which tourists are targeted.
You can find lots of things to make travel easier at Travelsmith and Magellan's who proved to be invaluable when I went to Siberia.

I don't know exactly how much you should take with you, but always remember that almost everything in Europe is way more expensive in the united states, especially the train rides, I heard that just one ride is $8. So depending on what your going to do there, where and what hotel, and for how long your going to be there, you should do some research before you go. Hope that helped.

It depends on where in Europe you are going as Paris, London, Rome and Barcelona are all very expensive. The old eastern block countries are still relatively cheap.
